Paneer and Gulkand Kheer and Kulfi

I like to make dessert which is easy and yummy and I can use it for another way too. This particular one is two in one dessert, make it like kheer and have it and put the leftover in kulfi mould and have it as kulfi too. I had homemade paneer , half I used in my diner recipe , rest I use it in this one. With all time gulkand fan, I have to add that in this dish too. Because of Gulkand (rose petals) I used less sugar, you can add as per your taste though, next time I will add my favorite date puree instead of sugar.

Ingredients :

3 cups full fat milk + 1/2 cup extra
1 cup heavy cream
4 tbsp. sugar or as per taste
1 cup homemade mashed paneer
2 tbsp. gulkand
As per your choice dry nuts, I took almonds.
Pinch of ginger powder and nutmeg powder
1 tsp. corn starch

Method:

Heat a big pan , add both milk and make it thick.
In one bowl, add mashed paneer, 1/2 cup milk and cornstarch. Mix it nicely.
Now add sugar in thicken milk along with ginger powder, nutmeg powder, gulkand, and sugar.
Mix it till it reaches to boiling point.
Then add paneer mixture and cook for just 8-10 minutes.
When it comes to room temperature, put it in fridge to get chilled.

At the time of serving, if you are serving as kheer, put it in bowl and enjoy.
But if you are making kulfi, when it comes to room temperature, put it in kulfi mould and then put it in freezer for 6-8 hours.
When you are ready to eat, take out the mould, rub it between your hands and take it out and enjoy.
So 2 in 1 dish is ready
