Tofu and Grilled Vegetables Fajitas

My love for mexican food continue with  this awesome easy and satisfing dish called Fajitas ( pronounce Fa- hi- tas)
In Mexico they pronounce J as H so its Japenoes and Fajitas. Got my point? let's move on to now cooking. You can take your choice of protein for this dish. Just make sure that you cut everything in match stick sizes, that's the key for this dish.

Ingredients:
4 whole wheat tortilla
2 Green Capcicum (match stick size chopped)
1 Red capcicum
1 onion
2 carrots
1/4 cup corn
Few flowers of brocoli
Half block of firm tofu
half zuchinni
1 Jalapenos
7 cloves of Garlic
2 tsp Taco seasoning
1 tsp Chioptle sauce
salt to taste
2 tsp oil
few dashe of Tabsco sauce
few black olives
fresh chopped coriander leaves
Lime slices
1 cup shredded montery jack cheese or chedder cheese
sour cream, guacomole

Method:
Cut every vegetables match stick sizes. You can make it without grilling too. I just like those flavors in vegetables that's why I do it. You can cut the vegetables and grill it or you can first grill it and then cut it. choice is yours. I cut it and then grilled it.
Vegetables are ready

Take a non stick pan and add one tsp oil, add match stick sizes tofu in it and shallow fry it , so it become crunchy from both side. Keep it aside.

Heat again pan and add one tsp oil in it.
Add all the Vegetables  in it. Add taco seasoning, chioptle sauce  and salt and olives and cook for few minutes.
If you are grilling then it doesnot need more cooking , if not then you have to cook until it has a crunch not too mushy.


Add Tofu and mix it gently so it coates with rest of the ingredients.



Sprinkle fresh coriander, lime juice and olives and mix it again.

For serving

Take one tortilla , have a big spoonful of veg mixture in it. Put a dollop of sour cream and guacomole , cheese  and fold it and enjoy it. Along side with some good mojitos or margaritas.

This is good for 3  adults.

  19. I like grilling vegetables too because of the added flavors from that method of cooking. I've actually grilled tofu for that reason too. I put it on a bit of foil for the first few minutes of cooking, so it'll be easier to handle, then took it off the foil to get nice grill marks. As for the tortillas, I put those over the heat for a few seconds to get a nice toast and add some crunch. Thanks for sharing this, Linsy!
