Soy Munchurian

We all had paneer, vegetable, chicken, fish , tofu Munchurian, Then who not soya munchurian? Let me tell you if you had not this one yet you are missing something. Make this one and you are going to make this again and again. To give more flavor to this soya, soaked them first 10 minutes in water then squeeze them and soak them in vegetable stock with ginger, garlic and chili paste. Don't worry it's not going to waster we can use this later in the dish only. Compare to other dishes this will be done in 20 minutes with prepration also.

Ingredients:

1 cup soya chunks (soaked as per above mention)
1 onion chopped in cubes
1 green and red capcisum each chopped
1 carrot
2 tbsp chopped ginger, garlic and green chili
1 tsp dark soy sauce
1 tsp vinegar
1 tsp sambal paste
1 tsp tomato ketchup
2-3 green onion chopped finely
1 cup vegetable stock
1 tsp oil

Method:
Cut everything and set aside.
Soaked soya chunks  in vegetable stock and 3 G's paste. when ready to cook squeeze water out of it and leave water for later use.
Heat a wok on high flame. Add oil in it.
Add ginger, garlic and chilies in it and flavor the oil.
Add all the vegetables in it and cook for a minute.
Add squeeze soya in it and mix it.
Add all the sauce and check for seasoning.

Add stock and cook for minute or two till there is no water left.
turn off the gas and sprinkle green onions on top and serve hot with fried rice.
If you like gravy ,when you add stock boil it once and add cornflour and water mixture and mix it.
