Jalapenos Cornbread Poppers

My love to spicy food always get me to Jalapenos, any style. Initially I brought cornbread package to make Jalapenos  Cornbread but love about food that you can change your game any time. But it is so typical to make cornbread you know, so I love poppers so why not to make open poppers? So I gather my ingredients and make this really yummy sweet and spicy poppers.

Ingredients :
1 8.5 oz package of Cornbread
10 M/L Jalapenos
1 egg
1 and 1/2 cup shreddred chedder ( one cup for cornbread, 1/2 cup for sprinkling)
1 cup frozen corn

Method:

Slice each jalapeno down the center and carefully remove all the seeds and veins..set aside.

In a medium bowl, mix up the Cornbread batter according to the box instructions, add in the Corn and 1 cup of the Cheddar and egg.

Fill each jalapenos halfs  with batter. don't overfill it, cause it will rise.
ready to go in the oven

Sprinkle them all with half cup of chedder.
Place them on a baking rack & sheet pan, bake them at 350 for about 15-20 minutes, or until the Cornbread is firm and cooked through. They will be puffed and cheesy too!
out from the oven

Let them cool cause they are HOT.
Good you are sharing.
Share it with everyone and then you can dig in.

Enjoy.

I had this with my guacomole and baked chimichanga with roasted vegetable.
