Greek Pasta Salad

June, July, August are Summer months here. Those months kids have vacation and we can do all kinds of outdoor activities, rest of the year its light jacket or heavy jacket kind of days. So in summer days don't like to spend more time in the kitchen, just pack up something and hit the road for beach or trips.  This pasta salad is easy to assemble and you can serve it cold and it has nothing in it which can go bad in hot summer days, so you can pack up this and enjoy your day. I made it for picnic so I have it in big batch but you can get idea of ingredients and ratio so use it as per your needs.

Ingredients :

1 box of whole wheat penne pasta

1 6 oz. of box of crumbled feta cheese

1 jar of Artichokes in oil

4 Roma tomatoes cut in big chunks
3 cucumbers cut in big pieces
1 red onion finely chopped
10 jumbo black olives cut in circle

Dressing :

1/2 cup olive oil

1/2 cup red wine vinegar

1 1/2 tsp garlic powder
1 1/2 tsp dried basil
1 1/2 tsp dried oregano
3/4  tsp ground black pepper

salt to taste

 

Method:

 

 

Cook Pasta as per pakacge directions.

In one big bowl , add pasta , olives, artichokes, tamatoes, cucumber, onion and feta cheese.

In other bowl, whisk togehte dressing ingredients and mix it well.

Pour it over pasta mix and cover and let it chilled for two hours or overnight.

Enjoy it outside.

When I took this for picnic, kids literally finish this and come back for more. I felt so guilty that I didn't had more to give it too kids.
