Pasta Arrabiata with Vegetables

To make pasta its always very easy and quick diner to put it on the table. When I am tired or late for diner, I always consider to make pasta. Serve it with garlic bread and wine and you have your diner ready in 15 minutes. This particular sauce is perfect for the Indian taste buds, because its spicy. Arrabiata means spicy sauce that's why if someone wants to try pasta dish for the first time , they should go for this sauce. So they can have nice spicy sauce to begin with and then you can go ahead and make white sauce , red sauce or pesto.

Ingredients :

Half box of Whole Wheat Penne Pasta
1 tsp. olive oil
1 chopped onion
1 chopped carrot
4 artichokes in oil chopped
1 roasted red pepper chopped
4 cloves of big garlic chopped
1 tsp. red chili flakes
2 tbsp. tomato paste
1 tsp. lemon juice
sugar to balance sourness
1/2 tsp. Italian seasoning
1/4 tsp. ground black pepper
1 can peeled and dices tomatoes

Method:

Heat oil in a large skillet or saucepan over medium heat.
Sauté onion and garlic in oil for 5 minutes.
Then add carrot, artichokes, roasted red pepper and mix it.
Stir in  sugar, basil, red chili flakes, tomato paste, lemon juice, Italian seasoning, black pepper and tomatoes; bring to a boil.
Reduce heat to medium, and simmer uncovered about 10 minutes.
In other pot, boil water and cook pasta as per package instructions.
When sauce is done , add pasta in it or you can take pasta in dish and then ladle sauce over it, your choice. I like to add pasta in sauce so it takes sauce flavor too.

diner is served.

  2. Wow!!! Some connection I see... I was just about to make something similar for tonight, not exactly the same though! Made garlic pasta sauce (my way) n cooked pasta.. Took a can of mixed beans out from a drawer... n there I read your post... Will post you soon on this...
