Badam Pista Kesar Kulfi / Almond Pistachio Saffron Indian Ice cream

In my city Ahmedabad  in India, there is one area called Manek chowk, Where in day time its a jewelry market and in the night time its flooded with food vendors. From pani puri, pav bhaji, chats and kulfi. The Most famous from all the vendors in Asharfi Kulfi. They have such a good and creamy kulfis that on a hot summer nights its perfect to enjoy this after having spicy snacks from other vendors. We used to go there just because to eat kulfis. Then they spread all over the city and now they are everywhere and divert into more items but my cherish memory is from kulfi only. To make kulfi at home is very easy now  a days and I was just missing home so made this and enjoy it. They served full, half, 1/4 which ever way you ordered. 



That's how we used to eat, 16 years ago, now lot of things have changed and I have to explore it again, got this image from google.


Ingredients :

1 cup Whole milk
2  cup Half and half milk
1 cup Heavy cream
sugar as per taste ( I add 6 tbsp.)
2 tbsp. Milk powder
15-20 Almonds
20 pistachio
Big pinch of saffron

Method:

Mix all the milk , milk powder, sugar and mix it.
Put it in container with lid in it in freezer for 4 hours.
Take it out from freezer and put it in blender along with chopped nuts and saffron and mix it so no ice crystal stays.
Pour it in kulfi moulds or shot glass and cover it and freeze it for 8 hours.

Before serving take it out at room temperature for 5-10 minutes , depend upon the outside temperature.
Traditional way of serving kulfi is cut in circle and eat it. But you can enjoy what ever way pleases you.
