Mexican Style Scrambled Eggs (HUEVOS A LA MEXICANA) with Avocado Toast

Don't you get bored eating same kind of eggs in the morning? If you are a fry egg , then same old way you have to make it. If you are a boiled then yes same old , same old. If you are a scrambled egg one then again same old. So why don't try to make it this way, add some spice in your boring breakfast and let the day begin with some spice. I served it on the side with spicy guacamole toast.

Measurement for single serve eggs, if you want to make more you can adjust the quantities as per your taste.

If you like to try other flavor , try Thai Scramble Eggs too.



Ingredients : 

1 tbsp. oil
1 Small onion chopped finely
1 Jalapenos , seeded and chopped finely
 Tomato , seeded and chopped finely
2 Tbsp. Thinly sliced cilantro leaves
Salt & Pepper as per taste
1 Large brown egg ( you can use white also )

For Toast

Wheat bread slices , Toast, and fresh spicy Guacamole

Method :

Heat non stick pan on the stove on medium heat. When pan is heated, add oil in it.

Add onion, tomato and Jalapeno and cook till it softens.

Add Cilantro and eggs and Folding eggs so it has nice big chunks of eggs with all the other ingredients together. Cook till all the eggs are cooked thru around 3 - 4 minutes.

Take it out on plate and served hot with wheat toast with guacamole and tea / coffee and you are good to go till lunch time.
