Lasuni Methi Palak Paneer (garlicky fenugreek spinach and cottage cheese)

Yes two greens in one dish. I cooked greens once a week, just because its good for us and yes I love it too. I remembered when I was younger and was in India, my parents get whole bunch of different greens and we used to sit and take one greens( bhaji) and clean it. I always pick palak cause it was easy. But now a days I have to do everything , no choice.

It's very east and quick dish , once you have everything ready. So lets move on.

Ingredients:

1 bunch of Spinach
1 bunch of Methi
10-12 pieces of Paneer (fry it and put it aside)
1 onion chopped
one whole bulb of garlic - finely chopped
1 tbsp of turmeric powder, red chili powder, dhania powder, jeera powder
2 tomatoes purees
1 tbsp ginger paste,
1 tbsp ginger paste
1 tbsp green chili paste
salt to taste
4 big spoon of oil (you need more oil in general for greens)

Method:
Clean and wash up spinach and methi.  you dont need to puree them but finely chopped them.
Chopped finely all garlic.
Heat a non stick pan, add oil in it.
when it's hot add onion and cook till it's translucent.
add garlic and cook it till it's slightly change color.
Add all the powder masala, tomato puree and all 3 pastes.
Mix it well till oil comes on top.
Now add spinach and Methi and mix it with masala.
cook it till all the water from bhaji is gone then add  salt and paneer and cook it till it's dry.


Serve it hot with roti or naan.
