Karela ki Subzi (bitter gourd curry)

I love karela in any way either it's cut or stuffed. Today I decided to make cut one. Stuffed one will be coming soon too. To cut the bitterness take out all the seeds from inside. Depend upon on size, cut them in 3 parts and then  cut them in length wise. After cutting them apply salt and just leave aside for 15 minutes. After 15 minutes wash under water and press them so all the bitterness and salt go away and ready to make curry.

Ingredients :
4 big Karelas ( Match stick chopped)
1 big onion (match stick chopped)
1 tsp each dhania jeera powder, haldi powder, red chili powder, garam masala
salt to taste
3 tsp oil

Method:
Heat a non stick pan, add oil in it.
When it's hot add onion in it. cook for 2 minutes and add karela in it.
cook on law flame for 8-10 minutes and mix them every 2 minutes.
When it starts to change color , add all the powder masala and salt and mix again.
Serve hot with roti, paratha or thepla.

If you can not handle bitterness add shredded jaggery but I like bitter so I didn't add any sweetener.
Instead of adding onion you can add potatoes also or mix both too.
