I am a huge fan of chewy, nutty energy bars. I made before also. But that required more ingredients and cooking, this one no baking, no cooking and only need 3 ingredients. Those three ingredients are Almonds, Dates and Dried Cherries. You can mix and match your favorite nuts and dry fruits but these are my favorite and it gives nice chewy and sweetness to bars. Just take cup of each ingredients, pulse it in grinder, press it , chill it and cut it in your favorite shapes. I made 20 sequares out of it. This is a very famous Lara Bar Cherry pie remake. You can use this to break the fast in Ramadan too.
Ingredients:
1 cup pitted dates
1 cup Almonds
1 cup dried cheeries
Method:
Roast the almonds. You can do it without roasting too But roasting will give nice flavor.
Combine dates, nuts and dried cheeries in food processor.
Pulse it till it becomes a ball like 1-2 minutes.
Take out in a dish which has plastic wrap on it
Press it and make a square shape.
Chill it in freeze for hour or two or overnight.
Unwrap the bars and cut it on 8 long bars or 20 small bars.
Wrap each bar in plastic or wax paper and put it in freeze.
You can store in freeze in upto 3 months. You can eat it straight from freeze. You can keep it outside too but it will not stay firm, but become soft.
You can coconut, chocolate chips, other nuts, dried fruits , crystalise ginger, ground nutmeg, cinnamon. Possibilities are endless.
