Corn Tomato Bharta

We make Aloo Bharta, Baigan Bharta why not to make corn bharta. Seriously we need to keep on inventing new dishes otherwise life become very dull, eating same thing on and on. I am always ready to try new dishes , if its not suitable for my tastebud, I do some changes and make it as per my taste. That's the beauty of cooking. You can take one ingredient and change it as per your liking. For this particular dish you need to roast tomato for better flavor. You can roast it on open flame or in pan. Just apply oil in it and roast it then grind it with other spices.

Ingredients:

2 Roasted Tomatoes
1 cup frozen corn or corn on the cob
2 tbsp oil /butter
1/2 tsp jeera
1 tsp ginger, garlic and green chili paste (if you are using seperate paste take garlic paste more then rest)
1 chopped onion
1 tsp tomato paste
1 tsp Turmeric powder
1 tsp coriander - cumin powder
1 tsp garam masala
1 tsp chili powder
1 tsp cashew
salt to taste
few strings of kasoori methi

Method:

Take the roasted tomato and cut it in small pieces.
Add it in the blender witih cashew, all powder masala, paste and make a fine paste.
Heat a non stick pan, add oil in it. Add jeera in it.
When jeera changes it color, add onion in it.
Cook till it changes it color and smell.
Add tomato puree and tomato paste.
Mix it very well and cook it for 2-3 minutes.
Add corn and cook for 2 minutes. Add salt and crushed kasoori methi.
Cook for one more minute and served hot with naan , paratha or roti or rice.
