Eggless Kaju Biscuit | Cashew cookies

This is not my recipe, but one of my good friend's , she made this during Diwali and we loved it. Since then I am making this whenever I feel like it. She was kind enough to give me the recipe so now I am sharing with you all. This require very few ingredients , but taste is amazing and gives nice bite too. I made it in two batches, in first I added little too much sugar so it's become dark and chewy , it was not bad at all, then in second batch I added enough and make it small cookies but you can make any size you want. You need to make dough kind of batter, not runny, so you can shape your cookies. I prefer this over kaju katri any time. This is perfect for any occasion, because it requires no baking soda, eggs or any baking essentials and done in few minutes. Try it and let me know how much you like it. Its a perfect Christmas gift too, if you wrap it nicely along with one more recipe coming up next week.

Ingredients :

1 cup Kaju \ Cashews
1/2 cup sugar
pinch of vanilla essence
4 tbsp. warm milk
pinch of saffron

Method:

If you store nuts in fridge, take it out at room temperature.
Heat the oven at 350 F.
Then grind it in blender till it becomes powder.

Add saffron to warm milk and mix it.
Take it add granulated sugar, essence, saffron milk, spoon by spoon only, don't add it all together.
Make a dough, roll it or give a cookie shape.
Take a baking dish , put the parchment paper in it, put your cookies there.
Bake it for 15-20 minutes.

Keep checking , it will burn quickly.
Once its nice and brown form sides, take it out.


Enjoy as it is or with a glass of milk.
