Chana Dalvada - South Indian Style

I just loved to make   Dalwada , its a tradition in my house back home, that every Christmas there has to be dal vada for lunch and who ever comes to my house to meet us, mom gave them hot and spicy dal vadas. This is another vada she used to make, this is only from chana dal and other spices. but unique taste comes from fennel seeds and white onion, she used to do double fry so I did that way too. But if you dont want to do , you can fry it once only. I had it with Coconut chutney. But its so crispy and yummy you can have it Gujju style with onions and fry chilies too.

Ingredients :

1 cup Chana Dal - Yellow Split lentils
1/2 inch piece ginger
few leaves of mint and coriander
1 tbsp Fennel seeds (saunf)
1 onion chopped
1 green chili
2-3 cloves of garlic
salt to taste
8-10 fresh curry leaves (kadi patta)
1 tbsp. Semolina (Suji)
Oil for frying

Method:

Soak the dal in water for about  2 -3 hours until its softens.
In a grinder, add soaked and clean chana dal, curry leaves, fennel seeds, ginger, garlic, green chili and coarsely ground it.
Take it in a bowl, and add chopped mint and coriander leaves, chopped onions, semolina  and salt.
Combine all these and taste it , if you need to adjust the seasoning.
If you can work fast, you can make vadas at that time only otherwise first make all vadas. Take some mixture and shape it into flat disc, like tikkis but flat. Keep it ready.
Heat the oil for frying.
When oil is hot, add one by one dal vadas in it, don't overcrowd the pan.
Cook for 3-4 minutes. take it out and do for the rest of it.
Once all is done, pressed it between your palm, and fry it again in batches.
Now it becomes nice crunchy and brown.

Serve it hot with coconut chutney or green chutney or with raw onion and fry chilies.



                                           

Using same ingredients , you can make this in Appe Pan too, its healthy and quick too.
