Manchow Noodle Soup

I am on a roll for soup now a days. Its quick and filling and good for you too. Since we are vegetarians and very cautious what we eat, there is not much weight gain issue but eating healthy and stay healthy is a big thing. So I always make sure that we get lot of vegetables and colorful dishes so we can cover all the base. This is very quick soup, once you have done all prep for it, it literally take 5 minutes to make it and then enjoy it. Serve it hot is always better when you have added corn starch in it  because after few minutes it become so thick that you don't enjoy it and one more thing, never keep it on gas for long after adding corn starch it will cook more and thicken , so once you get nice consistency, take off from the gas.


Gong Hey Fat Choy (Happy New Year)


Ingredients :

2 tbsp. oil
2 tbsp. chopped garlic and ginger
1 Thai green chili finely chopped
2 green onions chopped
1 capsicum sliced
1/4 cup shredded cabbage
1 carrot thinly sliced
2 tbsp. soya sauce or as per taste
2 tsp. white vinegar
2 tsp. red chili sauce
freshly cracked black pepper
1 tbsp. corn starch dissolve in 2 tbsp. water
3 cups vegetable stock

for Serving
1 cup fried noodles or you can crush Maggie noodles along with stock too.

Method:

Heat the pan with oil in it.
add ginger , garlic, chili and sauté for a few seconds.
add the spring onion and cook till soft.
Add the capsicum, cabbage and carrots and sauté for  2 minutes.
As you know all Chinese food you have to cook on high flame so it maintain crunch and cook fast.
Add soya sauce, vinegar, red chili sauce and sauté for few seconds.
Add the stock and now simmer for 5-7 minutes.
Add cornstarch mixture and stir constantly, so it mixes nicely and no lumps there.
Simmer for 2-3 minutes till the soup becomes little thick.
Serve hot with Fried noodles.

  7. With East coast in so much snow it is no brainier to go for such comforting soup. May be you should do a post on how you stock up your pantry for winter months.I am sure there would be many vegetarians who find it hard to withstand so much cold.
