Triple Berry Muffin

So day before yesterday we had snow day means school were closed due to heavy snow and icing on road. So have t make some hot breakfast for everyone, I wanted to make muffin since so long and didn't had chance to make it so first thing I woke up and heat the oven. I always find excuse to heat up oven in this cold so house stay warm and smells fresh baked food. It was very fast and easy and my son loved it so worth the try. You can use fresh or frozen or dehydrated berries in this, I had dehydrated in my pantry so use that one.

Ingredients :

1/2 stick soften butter unsalted
1 cup milk
1/2 to 1 cup dried mixed berries , I had strawberries, blue berries and black berries 
2 cups AP Flour
1/4 tsp. salt
1 egg
1 tbsp. baking powder
1/2 cup sugar

Method:

Preheat the oven at 400 F.

Melt butter, add egg and milk and beat to combine.
Sift the flour, sugar, baking powder , salt and add the berries.
Mix gently , no need to over mix.
Spoon the muffin mix into the greased muffin pans or silicon cupcake molds.

Bake the muffins for 15-20 minutes or till its nicely brown and done.
Take out and let it cool for 5 minutes.
Carefully remove from the pan. Have it with your tea or coffee with nice layer of butter or favorite jam.

  4. lovely muffins. Most places I have seen sell dried cranberries and blueberries. Haven't seen strawberries and blackberries. Will check out properly next time when I am in UK or Canada.
