Baked Mexican Spring Rolls

I love spring rolls either the filling is Chinese or Mexican or Indian. So when ever I had leftover fajita mix, I use it in spring rolls and give a dish a new make over. But if you want, you can make fajita and use it for this rolls. I already have fajita recipe so I am not writing it again. Serve this along with your favorite salsa, guacamole or my Greek yogurt chipotle dip and you will make this again and again. and yes its baked not fried so its guilt free snack.

Ingredients :

1 cup leftover Fajita mix
6 spring rolls sheet
oil to spray

Method:

Take one spring roll sheet and put one big tbsp. stuffing in side.
Fold it from that corner and both sides. Make an envelope.


Apply water on Edges and seal it tightly.
Grease a baking dish and apply  oil on top side of rolls too.
Bake it in a oven on 375 for 10 minutes or until its brown from both sides. Turn in between.
You can fry this too.
Serve hot with Greek yogurt chipotle dip.
