So its summer here and we get so busy I didn't had time to post since last few weeks, but now back to the blogging again. I didn't post , it didn't mean that I wasn't cooking so here it is, Healthy , spicy Mexican flavors in a bowl. You can use tortilla and stuff these ingredients in it and make burrito out of it too. but to cut the card, I just eat it as it is in bowl and since I have few packs of soy products , I used in this dish, and it was vegetarian beef , it was going so well with Mexican flavors too. You can use practicality any regular meat or sea food in this dish or more vegetables in it and make it. There is no hard and fast rule when it comes to cooking , yes if you are baking something then you have to follow each and every ingredients , measurements cause baking is a science.
Ingredients :
1 cup washed and cooked quinoa
1/2 packet of vegetarian beef, if you want you can cut it strips, I keep it as it is
Few leaves of Lettuce, cut
10 Cherry tomatoes cut in half
1 Jalapenos , cut it in circle
Few black olives, cut in circle
1 onion cut in slices
1 carrot, cut in slices
2 tbsp Paprika powder
1 tbsp Garlic powder
3 tbsp corn
2 cloves of garlic chopped
Salt as per taste
1 tbsp crushed oregano
1 tbsp. oil
2-3 Tbsp Avocado coriander dressing
Method
Washed and cooked quinoa as per directions.
Drain and keep it aside.
Cut the vegetables and get everything ready for the cooking.
Add oil in heated pan, add garlic and saute for a minute, add onion , carrot , corn and few rings of jalapenos and saute for few minutes, then add beef and cook till its soft.
Add quinoa and all the spices and mix it nicely so it coated in spices and everything.
Take it out a bowl. Add chopped lettuce on side, one side put the cherry tomatoes, olives and then cooked quinoa - beef mixture.
Spread the dressing on top and leftover jalapenos rings on top and enjoy.
