Veggie Lo Mein with Zucchini Noodles - Gluten Free

Zucchini is perfect to spiralize. And I love to use my spiral machine so far using in regular cooking, making Italian way but didn't try it Chinese way. So was thinking about Chinese for dinner and instead of my usual noodle stir fry, I was thinking to use Zucchini as noodles and feed more vegetables to my kids. For this quick stir-fry, prepare all your vegetables ahead, make your sauces out and measured, you don't want to waste any time once you turn on the gas Since we don't want vegetables to get mushy. For this dish, I spiralize zucchini and carrot, if you carrot is small, you can shred in a big shredder or cut it the same size as other vegetables, since chopping in the same size is very important in Chinese cooking so it takes some time to cook. 









Ingredients : 

1 Big Zucchini
2 Big Carrots
Few slices of Mushrooms chopped
1 Big onion chopped
1 Stick of Celery chopped
2 cloves of Garlic finely chopped
2 inches of Ginger finely chopped
2 Tbsp. olive/canola oil
2 Tbsp Gluten free soya sauce / Coconut Aminos
2 Tsp. Toasted / Spicy sesame oil
1 Tbsp Mirin/soya sauce
2 tbsp. Sambal sauce - optional - as per taste

You can use regular sauces, giving you gluten-free options.

Method : 

Heat the wok on the high flame, while its getting hot, mix all your sauces except Sambal sauce

Add oil in it and add carrot, celery, mushroom, onion and cook on high flame, then add ginger and garlic.

Add Zucchini noodles and sauce and stir fry till noodles just wilted. We don't want mushy vegetables. so everything is on high flame and quick.

Adjust the seasoning and shut off the gas.

Take the serving dish and serve immediately.

Zucchini will lose water but its ok if you are eating with rice and another dish.

I had it with stir-fry rice and  Vegetarian duck and steamed dumplings

2 Ingredients Easy Caramel Sauce

I so wanted to make this for such a long time but looking at the recipes, it has careful warnings when you add milk and if you are making it from can, it has to be in water for more than 12 hours and I am not ready for that long process and I have kids in the house so not at all interested to do anything with boiling and spattering things. So was looking for an easy recipe and found one and made it to make sure it works or not and it works. If something is so good and easy, I have to share it with you all. so get ready to make the easiest caramel sauce.

Ingredients : 

1 cup Brown sugar
1/2 cup water
1/2 cup butter
1 tsp. Vanilla essence -optional

Method:

Add Sugar and water in a pan on medium heat.

Bring to boil and then lower the heat and let it simmer for 1-2 minutes.

Add butter and stir it melts.

Pour carefully caramel sauce into a bowl and let it cool.

Then pour it into a bottle with an airtight lid and store it.

Best to keep it in the fridge so it last longer, when you need, heat up in a microwave for 30 minutes and pour it on ice cream, waffle or anywhere you like it.

Easy 2 Ingredients Chocolate Fudge - Microwave version

Don't know about your area, but it feels like fall is in the air, where I am and what fall bring, baked goodies, festival season. So today I am sharing an easy but foolproof recipe for 2 ingredients chocolate fudge recipe, I have added vanilla essence and M & M candies in my fudge since my daughter is a big fan of candies. But you can make it without it or add half candies and half Oreos too. just like other recipes possibilities are endless.
Ingredients : 

1 Can Condensed milk (14 ounces)
1 Pack semi-sweet chocolate chips (12 ounces) 
Few drops of vanilla essence
1 package M & M candies (optional )

Method : 

Take a glass dish and put parchment paper long enough to stay outside so its easy to handle fudge. 

Put first chocolate chips in a microwave safe bowl and then add condensed milk on top of it. 

Microwave high on 2 to 3 minutes. 

Remove the bowl with mittens since its hot and mix it very well and if not melted put it again for 30 seconds and watch it. 

Mix it and add vanilla essence in it. 

Spread it on a dish which has parchment paper, and gives a shape.

Sprinkle with M& M candies, cookies, chopped nuts or as it is. 

Keep it in refrigerated till its set and then cut it and put it container in the fridge and enjoy it.
