Baked Eggplant Parmesan sandwich

In my house my husband eat eggplant only two ways, one is eggplant bhurtha and another is this sandwich. He also love to cook and eat so we try so many ways to make  eggplant so it stays crunchy even after with cheese and sauce. Finally I discovered the best way to cook it. Eggplant skin is bitter so first of all you have to remove its skin. Traditionally it's dip in egg and then AP flour mix and again egg and then in breadcrumbs then deep fry it. We want to avoid deep frying and eggs altogether so I used buttermilk mixture and breadcrumbs only. You can use egg mixture and deep fry it or my way and deep fry it too. But I like to bake it so it stays crunchy. You can serve this as a meal. so lets get back to recipe

Ingredients:
2 black big eggplants (cut in circle) don't take it seeds part, remove skin
4 long breads (i use whole wheat)
1 cup seasoned bread crumbs
1 cup buttermilk (you can make it at home , mixing milk and yogurt
salt and pepper to taste in both buttermilk and breadcrumbs
1 jar marinara sauce
2 cups mozzarella cheese
6-7 cloves of garlic (thinly sliced)
2 spring onions (finely chopped)

Method:
Preheat oven at 350 F.
Wash and cut eggplants in circle.
Take two bowls , in one bowl put bread crumbs, seasoned with salt and pepper and in another buttermilk, seasoned it too.
Dip eggplant first in buttermilk and then in bread crumbs. Make sure you use one hand for wet mix and another for dry so both bowls stay clean.

Put them in baking dish which is already spray.
Ready to go in the oven


cook in in the oven for 15 minutes , turning in the middle to cook on both sides. take out from the oven and leave it aside.

To assemble sandwich, take one bread put 2-3 big tbsp marinara sauce on bread, then put eggplant slices on  it, put generous amount of cheese on it, sprinkle garlic and green onion in it. Put it in aluminium foil and baked it in the oven for 10 minutes or until cheese is melted.  CAUTION : the inside of the sandwich will be very hot so eat it very carefully. 

You can make this on casserole too instead of sandwich, first sauce then breaded eggplant, cheese, layered it and top it with mozzrella cheese, cook till cheese melt and serve hot with a side of garlic oil infused speghetti.

Sev Usal

This is yet another spicy and tempting Indian snack prepared with ragda. One can make best sev usal at home by just topping up ragda with boiled potatoes,  chopped onions, tomatoes and lots of sev.

The additional garnishing of flavorful green coriander chutney, sweet and tangy date tamarind chutney and spicy garlic chutney makes this Gujarati snack a delightful and palatable experience.

 For Ragda you can use my  Ragda Patties recipe here.

For ragda
1 cup White or yellow Vatana (dried yellow or green peas)
1 onion

1 potato (boiled along with peas)
1/4 cup soaked and dry soya granules
2 tomatoes
1 tsp turmeric powder
2 tsp red chili powder
1 tsp dhania-jeera powder
1 big spoon ginger, garlic, green chili paste
5-6 black peppers
1 tsp tamarind paste
salt to taste
2 tsp oil

For Garnish : 

Tamarind chutney
coriander- mint chutney
garlic chutney
sev, coriander leaves, 
onion, tomatoes, 


Method:
Soak peas overnight in water. then pressure cook till it's done.



To make Ragda :

 make a paste of rest of the ragda ingredients in mixture except oil and granules.
Heat oil in nonstick pan, add the paste and cook it till oil floats on top.









Add pressure cook peas and potatoes mixture& soya granules in it.
If water is not there, add some water to make the right constituency. 

Boil it till you get nice bubbling gravy.




when it's done take one serving bowl pour Raga in a bowl, and top it with chutneys and sev, coriander leaves, onion, tomatoes and eat it the hot and tangy bowl of heaven.

Thai Green Papaya Salad

This green papaya salad, also known as "som tam", is popular the world over, and when you taste it you'll know why. The slightly tart flavor of the green papaya combines wonderfully with the spice of red chili and the saltiness of soya sauce  and dried shrimp and the sweetness of honey (note that it can also be made vegetarian/vegan - see recipe). Green papaya salad is a beautifully unique and flavor-filled dish that will make a great impression. It's also easy to make, low-calorie, and very nutritious. So try this Som tam recipe for dinner tonight!

Ingredients:
1 small green papaya
1/2 cup roasted peanuts
1 small red onion
3 cloves finely chopped garlic
1 tomato (chopped in cubes or long strips)
1/4 cup chopped thai basil
1 or 2 green thai chili
6 blanched green beans
few strings chopped coriander leaves


Dressing:
1/2 tsp soya sauce (you can use fish sauce too)
2 tbsp good vegetable oil
3 tbsp lime juice
1/2 tsp honey
1/8 tsp chili flakes

Method:

  1. Stir all 'Dressing' ingredients together in a cup. Taste-test for sweetness and spice, adding more honey or chili to taste. Set aside.
  2. Use a sharp knife to peel the green papaya, then slice it in half and use a spoon to scrape out the seeds. Using the largest grater you have, grate the papaya, or you can use a potato peeler to create thin, ribbon-like strips. Place in a large bowl.
  3. Add sliced tomato,  chili/cayenne,  green beans  and most of the basil. Pour over the dressing, tossing well to combine.
  4. Add nuts and toss again. Taste-test the salad. If not sweet enough, add a little more honey or a sprinkling of sugar. If not flavorful enough, add a little more soy sauce. If too sweet or salty, add more lime juice. Add more chili for a spicier salad.
  5. To serve, scoop into individual bowls or onto serving plates. Top with remaining basil leaves plus fresh coriander and a sprinkling of more nuts. Serve immediately and ENJOY!

Make Ahead Tip: If you wish to make this salad ahead of time, combine all ingredients except the nuts and the dressing. You can then leave it covered in the refrigerator several hours, or overnight. Add the dressing and peanuts at the last minute, then toss and serve.

Grilled 7 layer Burrito

In my house, we prefer Mexican food over Italian. Because first of all you can make it spicy and it is less heavy then Italian food. You can control the cheese portion. That's why once a week is a Mexican fiesta in my house at dinner time. This week I make two dishes for one night because it has the same ingredients and same prep work but you can enjoy both dishes. For same stuffing, I made burrito and Taco too. Only in Taco, you don't have to put rice in it. 7 layer means it contains seven things inside. First Mexican rice, beans, lettuce,  tomato, guacamole, sour cream, Cheese  In Taco Bell they don't put onion but I like the crunch in it so I always added that.

Ingredients:
For Refried Beans:

1 can refried beans
1 tsp taco seasoning
2 cloves chopped garlic
1 seedless Jalapeno chopped
few drops of Tabasco
1 tsp oil

Method:
In a Small pan, add oil.
Add garlic and jalapenos and saute till u get a nice aroma, for a minute or so.
Add refried beans, seasoning and little water to lose the mixture.
Stir it nicely and cover it and cook for 5 minutes on slow flame.

Once done, add Tabasco and stir it and keep it aside.


Ingredients for Mexican Rice:
2 cups cooked rice( I use brown rice but you can white)
1 onion chopped
2 cloves garlic chopped
1 seedless jalapeno chopped
1 small capsicum chopped
1 carrot chopped
1 tsp taco seasoning
salt to taste
few strings of cilantro chopped
1 tsp oil

Method:
In a medium pan, heat oil.
Add garlic and jalapenos and cook for a minute.
Add vegetables and cook for 2 minutes.
Add rice, seasoning, salt and mix it and cook for 2-3 minutes.
When done add cilantro and keep it aside.

Ingredients for Burritos:
4 Whole wheat burrito style tortillas
1/4 cup cheddar cheese
1 red onion chopped
1 red tomato chopped
few lettuces leaves chopped
Guacamole
Sour cream
Tabasco sauce as per your need

Assemble : 
Take one tortilla, spread bean mixture first, then rice, then onion, tomato, lettuce, guacamole, cheese, sour cream and fold it. You can eat it as it is or heat at griddle and grilled on both sides and serve it.

Seven layer burrito

Same way you can make Taco too. But in that, you don't need to put rice. Just Beans, onion, tomato, sour cream, lettuce, guacamole, cheese.

Taco
Enjoy Mexican Fiesta at your dining table. Serve it with some soda or beer or margarita. Anything you prefer.
