Vegetable Biryani with Salan

I never had biryani with any gravy, we used to have it with spicy dal or raita. But after coming to the US , came to know that in South India, biryani is served with gravy called Salan. Correct me if I am wrong. so I had my biryanis with dal and raita so this time I thought to make salan, since I love the taste of salan and I was trying that gravy to make different dishes. This time I didn't layered my biryani just roughly mix it with cooked rice so I can get all the cooked vegetable flavors in it. Take your family's choice of vegetables.

Ingredients :

4 cups cooked Basmati  rice (3/4 cooked)
1 onion
2 tomatoes
5 big pieces of cauliflowers florets
1 big potato (in cubes)
half each red and green capsicum
1/4 cup pigeon peas
1 cup soaked and drained soya chunks
each of whole garam masala ( bay leaf, star anise, big and small eliachi, few black peppercorns, few cloves)
salt to taste
2 tbsp. each grated ginger, garlic
2 chopped green chilies
few strings of mint leaves
3 tsp. Ghee / Vegan Butter
1 tbsp. turmeric powder
1 tbsp. Biryani Masala
1 tbsp. red chili powder



Method:
cook rice in lot of water, add one green cardamom to flavor it and salt till its 75% cooked
Drain it and keep it aside.



In a big pot, add ghee / Vegan butter  and when it hot, add whole spices, when you get nice aroma, add chopped onion.

Cook till it changes it color and then add ginger and garlic and chilies along with powder masala.

Add vegetables and soya.

Add cup of water and mix it and add salt to it. cover it and let it cooked till all vegetables cooked.

Add cooked rice in it and mix it gently so rice grains stay whole.

Add few strings of mint in it. Cover and cook till its rice is cooked fully. 



Salan :
2 tbsp. sesame seeds
2 tbsp. grated coconut
2 tbsp. raw peanuts
1 tsp. chopped ginger
1/4 cup chopped onions
1 tbsp.. turmeric powder
1 tsp. coriander and cumin  powder
1 tsp. chili powder
1 tsp. tamarind pulp

Combine the sesame seeds, coconut, peanuts, ginger, garlic and onions in a pan and dry roast them over a slow flame till the flavors are released and the ingredients are lightly browned.

Add the turmeric powder, coriander  & cumin powder, chili powder and tamarind paste and grind it to a smooth paste using ½ cup water. Keep aside.

To Serve :

Take a bowl , add biryani in it and pour as per your choice salan on top of it.



Serve hot and enjoy.

Mysore Masala Vegetable Uttapam / Indian Pizza

Yes I think kids know this dish more as Indian Pizza if they don't know how to pronounce it. Uttapam is thicker than dosa and its open face, not like dosa you can stuff masala in it and fold it. In Uttapam you can see what's inside. I wanted to make this for so long but one way other it goes postponed, one fine day I made it. I always have batter in fridge because my kids love dosa. This batter is thicker than dosa too. And because I love spicy food, I added Mysore masala chutney in it too. You can make it with your favorite toppings also, spread cheese for kids and make a colorful uttapam too.

Ingredients :

2 cups Uttapam Batter (2 cups rice, 1 cup Urad dal with fenugreek seeds (methi) in it for at least 6 hours, grind with thick consistency and let it fermented for over night, add salt when using it)

1 cup chopped red , green capsicum , tomato, onion, slice of ginger, green chilies, few strings of fresh coriander leaves and mint leaves

For Mysore Red chutney :

1 /4 cup  chana dal
10 dry red peppers
3-4 cloves of garlic
slice of ginger
salt to taste, 
1 tbsp. oil, lemon juice
Roast chana dal for 5 minutes. Put it in blender with rest of the ingredients and mix it. Don't add too much water, we don't want watery chutney but thick one.

 
Method:
 
Heat a non stick dosa pan. Add big spoonful of batter  and make a thick big circle.
Spread generously chopped vegetables.
Drizzle a tsp. of oil if you desired.
cook on medium flame for two minutes.
Turn it over and let it cook on other side too.
Again Turn it over and spread as per your spice level, red chutney on it.
Let it cook for minute and take it out on serving dish.
If you wish cut it in four triangle pieces and serve it with leftover red chutney and coconut chutney.

Coconut Tuttifrutti Laddos (Balls)

MERRY CHRISTIMAS TO ALL OF YOU.

It has been a very bad rep given by Hindi movies to Indian Christians that all are drunks or don't know how to speak Hindi or wear small clothes. which is not at all right. Christians are in every part of India and they live and cook their food same like other people. We make cakes during Christmas time no doubt about that but we make other goodies too, same as Diwali. How I know about this ? because I born and brought up in Christian home , so I know all this. Hope every one has nice Christmas.

I had more than half can of condensed milk sitting in the fridge and every time I open my fridge , it calls my name , saying eat me please. I love to eat condensed milk as it is, I can eat the whole can , not in one sitting but little by little spoon every day. So after resisting take a spoon out of it again, I thought no , lets make something out of it. I remember my first sweet I made when I don't even know how to cook was coconut balls from condensed milk and coconut powder. I had it both so I thought why not to make those again. Its been ages I had those, but being a blogger I have to improvise little too. Had half a packet of tutti-frutti too. So I take that out too and was staring at them , thinking I am in Chopped kitchen. It was not hard to make so made it and love it.

Ingredients :

2 cup coconut powder
3/4 cup condensed milk (or as per your sweet tooth)
few cashews and almonds chopped
pinch of cardamom powder
2 tbsp. tutti-frutti

Method:


Take coconut powder in a bowl. Add chopped cashews , almonds and cardamom powder in it.
Start adding condensed milk little by little, I started at 1/4 cup and then I forward if I needed more.
Don't pour all condensed milk all together.
Add tutti fruttie in it.
Then pressed it with spoon to form a dough.
Make rounds and put it in the fridge for 10 minutes. Depend upon where do you can live,  outside or inside the fridge. Enjoy the sweet goodness of coconut balls.

I had the rose molds so I put it in that. If you want to do any fancy do it.

Candy Cane Squares

I love no bake desserts specially cheesecakes, so I keep cream cheese always in my fridge, if I have get together at home or we are going somewhere, its easy and always a crowd pleasure desserts. So when we were going for diner at friend's house I made this and it was big success with both kids and adults. You can freeze or refrigerate both,. perfect for holiday diner.

Ingredients :

For crust :

2 cups crushed Oreo
4 tbsp. melted butter

Filling :

1/2 cup powder sugar or as per taste
1 candy cane flavor pudding mix.
1 cup cold milk
1 cup whipped cream
few candy cane for decorations

Method:

Combine curst ingredients in a bowl or dish which you are going to use, Since I was taking that for friends house, I made it in aluminum round dish. Spread crust in the bottom of the dish and leave it aside.
Take one bowl and  add candy cane pudding with milk, fold it till its creamy then  , fold in whipped cream and candy cane. 
Pour this mixture over the Oreo crust.
Spread it evenly and sprinkle candy cane on top.
Cover the dish and put it in fridge for 2-3 hours.
when you are ready to eat, take it out and cut it in squares or triangle and enjoy.
