Bharwan Karela / Stuffed Bitter gourd

I love all stuff vegetables. By now you saw me stuffing eggplant and Brussles sprouts. But sometimes I make all the vegetables like eggplant, karela, parval, tinda, onion, potatoes and make one wholesome delicious dish only for me. That's right becasue what did I said, I LOVE stuff vegetables.
Recipe is very simple and easy to prepare this dish with side of roti.

Ingredients :

3 long thin karelas (bitter gourd)
1 potato cut in big cubes
1 tbsp tomato paste
1 small onion finely chopped
2 tbsp fresh ginger, garlic and green chili paste
1 tsp red chili powder
1 tsp turmeric powder
1 tsp cumin coriander powder
salt to taste
2 tsp oil

Method:

Cut karela in 3 or depend upon the size.
Make a cut in the middle and clean the inside  and remove all the seeds.
Heat a non stick pan , add 1 tsp oil and cook karela for 2-3 minutes.
Take it out and keep it in dish.

mix all the ingredients from tomato paste to salt in one bowl.
Stuff it in karelas.
Heat remaining oil in non stick and all the karela and potato in it.

Cook on medium flame till potaotes cook thoroughly.
Enjoy with hot roti and raita.

    3. I have always loved only the filling of this dish...I remember I would make my mother keep some for me before she would stuff the karelas!!
      Brought back wonderful childhood memories!!

      Loved it, although very apprehensive to try initially, it tasted soooo good!

    9. Sometimes I run out of ideas on what to do with bitter gourd. I cook it quite often as the natural remedy for my other half's diabetes. I am glad that I saw your recipe and this is one I am gonna try. A fabulous idea with an outcome I adore.
