This is very easy and quick dish when you don't have other choices or fridge is empty or unexpected guests arrived. Every house has besan , carrot and capsicum so it is very easy to fix it up this dish. Gujarati food is very flavorful when it comes to simple spices. We use it such a way that all spices stand out alone and very unique in taste.
Ingredients :
1 green and red capsicum chopped
1 carrot chopped
1/4 cup peanuts
1 green chili chopped
1 tsp cumin
1 tsp red chili powder
1 tsp turmeric powder
1 tsp cumin and coriander powder
salt to taste
1 1/2 to 2 tbsp besan / chickpea flour
2 tsp oil
Few strings of fresh coriander leaves and lime juice
Method :
Heat a non stick pan, add oil in it.
When its warm, add cumin seeds and let the color change.
Then add all vegetables and powder masala and peanuts.
Add salt too. Remember you are adding salt for besan too. so adjust the quantity of salt.
Cook on high flame for 5 minutes.
Then add besan and mix it very well with vegetables so it coats to them.
cook for another 5 minutes strring constantly
Before serving add fresh chopped coriander and lime juice .
Serve it with plain chapati.

I love anything with Besan on it. It takes the entire recipe one step above.
