Eggless Baked Kalkal

My mom used to make this kalkal on every year in Christmas back home. She knead the dough and me and my sister and dad, sit down , took forks and make kalkal and she fry it. I didn't know this is a very famous Goan snack for Christmas, I just thought it's regular Christian tradition to make this during festival. But being Gujju, I still don't know how mom knew this , I have to asked her that. Maybe from her colleagues I guess. After coming to US, I never made it but this year, looking everyone making it and posting it I was craving for that sweet yummy cookie kinda taste but again was not in a mood to fry it. Was very sure that no matter what and how it may go I will baked this, what bad thing happen, it has flour , sugar , it will be cookie anyway. So when I am done making snickerdoodle cookie , I started making my dough for this. I added my coconut oil in this instead of regular oil or butter and I had leftover cinnamon sugar from cookies, So I roll it kalkal in that and baked it. Result you might say? yummy , crunchy delicious baked kalkal. I totally forgot about the taste , so I went back to past 17 years ago when last time I had this. Now Christmas or not, I will make this any time.

Ingredients : 

1 cup All Purpose flour
4 tbsp. coconut oil , melted , you can use butter, oil anything.
1/2 cup sugar
Milk as needed

optional to roll in cinnamon sugar mixture, but that's the reason I took less sugar in dough, but if you are not using this mixture , add little bit more sugar.

Method:

Preheat the oven at 375F.
In a bowl, add flour , coconut oil, sugar and make a dough.
If its less oil , add warm milk little by little so form a dough.
Take fork, take a small ball from dough, put it on fork lines, press it hard and then fold it form one side.
roll it in cinnamon sugar mixture and put in on baking dish line with parchment paper.

Bake it for 25-30 minutes or till flour changes the color.
Take it out and let it cool.
Store in in airtight container and enjoy it with family and friends on this joyous festival.

Snickerdoodle Cookies

Baked this cookies on Christmas day to take it to party that day, I was baking and my two kids and huby was "testing", they knew we have to take this to party but could not resist. Ya that's the truth about this cookie that you can not resist it, when it was baking the aroma of cinnamon and sugar , I can't even explain that. After baking was done and cookies were all cold to pack, I was little hesitant to take it because it was less than what I was expected. But I promised my friend that I will bring cookies so pack it and took there and everyone loved it there too. When we came back from party and next morning kids were asking me , mom did you saved some of those yummy cookies you made? I said sorry kids, will make new batch soon, but right now I don't have this, so hopefully over the weekend I have to whip up one more batch again.

Since 1st of December, I started working again full time that too after 8 long years, so I have no time to visit you guys  , the way I used to be. But I am trying hard to visit you and getting back to normal as soon as possible so bear with me guys please.

Ingredients :

1 1/2 cups sugar
1 cup (1 stick ) margarine, softened, you can use butter too
2 Eggs
2 3/4 cups AP Flour
1 tsp. baking soda
1/4 tsp. salt

To roll the cookies in 
1/4 cup sugar
2 tsp ground cinnamon


Method:

Heat oven to 400F.

Mix sugar , margarine, eggs in one bowl. Stir the flour, baking soda and salt.
Shape dough into small balls.
I used 1/2 tbsp. to measure my cookies so all cookies come out same size.

In one bowl , mix sugar and cinnamon  and keep it side.

Roll balls in cinnamon - sugar mixture.
Place 2 inches apart on cookie sheet with parchment paper on it. 


Bake 8 to 10 minutes or until nice little brown in color.
Take it out and put it on wire rack to cool it.
Enjoy it when it cool.

Langarwali Aloo Gobhi ki Subji | Potato and Cauliflower Curry

Langar food is really yummy , its simple nothing fancy ingredients going on , only fresh ingredients and you can taste that in the food. Never had a chance yet to taste it but would love to make that at home. I will taste it when I will have chance but until then I can enjoy this at home. This has nothing fancy or out of the pantry ingredients, but taste so good. You can pair it with Dal Makhani / Creamy black lentils and you will have langar experience at home. In this recipe, you have to use fresh chili, garlic and ginger, don't use pre made or store bought paste. You can make it with big florets but in my house everyone love small that's why I made it with small but if your family prefer big then go ahead. Langar food is prasad so everything has to be fresh. so without further chit chat lets make this.

Ingredients : 

3 cups of cauliflower florets
1 potatoes cut in small cubes
1 small onion chopped
1 tsp. Mustard seeds
1/4 cup frozen or fresh peas
1 tbsp. shredded ginger
2-3 cloves of garlic chopped
1 green chili chopped
1/2 tsp. Turmeric powder
1 tbsp. Red chili powder or as per taste
1 tbsp. cumin coriander powder
1 tsp. garam masala powder
salt and lime juice to taste
few leaves of coriander chopped
2 tbsp. oil

Method:

Heat a oil in pan, add mustard seeds, when its started popping, add onion, cook till its little brown.
Add Ginger , garlic and chilies and cook for 30 seconds.
Add all the powder masala. Mix it.
Then add cut and washed cauliflower, potatoes and peas.
Add salt and cook it on slow flame with the lid on.
You have to make sure that it cook on slow flame and you don't mix over and over and brake florets. That's the only thing you have to keep in mind.
When its done, sprinkle some lime juice and coriander leaves and serve hot with rotis and dal.
Langarwali aloo gobi ki subzi is ready to eat.

Eggless Chocolate Chips Cookies

My kids just love chocolate chips cookies. If you give them for breakfast, lunch , dinner , they can survive on it, specially my daughter. If you follow my FB page, I posted few times baked  cookies and got request of a recipe so here I am sharing with you all my kids favorite. They made it so pardon me with the shapes and they like crunchy so I keep it a tad more in oven but if you like soft cookies, as soon as it turns brown from side, take it out. Once this batch is done, I have to make another batch , but this time will make something new , will share it with you all too.

Ingredients :

1 cup AP flour
1/2 tsp Baking soda
pinch of salt
1 stick or 1/2 cup unsalted butter, soften
1/4 cup granulated sugar
1/4 cup light brown sugar - If you don't have brown sugar, take extra 1/4 cup regular sugar.
1/2 tsp. vanilla essence
2 tbsp milk
1/2 cup or as per your choice chocolate chips

Method:

Preheat oven at 350 F.
Line a baking dish with parchment paper or with cooking spray.
In a bowl. take flour, baking soda and salt and mix it.
In another bowl, take butter and beat it till its creamy,
Add sugar and beat it again.
Add vanilla essence and milk and mix it again.
Add dry ingredients in it and incorporate it.
Add chocolate chips and fold it gently.
If you see mixture is too soft, put it in freezer for 15 minutes , take it out and make a small balls.
I used 1/2 tsp to make balls.
so it should be even and cook evenly too.
Put the cookies few inches afar so when its baked and spread  it doesn't stick to each other.
Cook it for 10-12 minutes or till the sides are golden brown.
Take it out, let it cool it in baking sheet only, then to cooling rack for completely cool , then you can enjoy it with cold glass of milk.


 Do you see in one cookies , its smiley face kind of effect? well kids can do things.




 Well she was so eager to eat it, I took picture when she was holding it in her hands and she and her brother just finished that bowl in no time.
