I like to experiments with my parathas. So I done quite a variety of paraths for our breakfast so one day I got nice bunches of fresh coriander and mint. Using for just garnishing or in tea, I was not satisfied so I added them in flour and make one nice breakfast or brunch dish out of it. Best to eat is from pan to dish, that time its so nice and crunchy, you can finish the whole batch, no need to store it but if you are eating it later on , make sure you warm it again and have it to delish the flavor.
Ingredients :
1 cup mixed and chopped coriander and mint leaves
(its upto you which u like most, I am partial to mint so I took more mint)
1 cup whole wheat flour
1/2 cup millet flour (bajri flour)
1 tbsp. white sesame seeds
1 tsp. turmeric powder
1 tsp. red chili powder
1 tsp. aamchoor powder (dry mango powder)
salt to taste
2 tbsp. oil to mix in flour
oil for cooking
Method:
Mix everything in bowl and make a stiff dough.
Make 9-10 small rounds and keep it aside.
Now heat the pan .
Make a circle and roast it on pan.
Roast on both side and when its done, put less then tsp. oil and cook on both side until its little reddish in color.
finish with all parathas and serve hot with tea or at the brunch with pickle or yogurt or have it as it is or with your gravy dish for diner. You can take it in your lunchbox also.
