I love cardamom in any form, to start the day with, I love it in my tea. Then in cooking also while making rice or some curry for koftas I always add whole or crushed cardamom in it. Even if I am not cooking I am always chewing cardamom , its better than any mouth fresher , So I had two bananas sitting on my counter top, I was hoping after two days that kids wont eat that so I can make banana bread. You guys love my previous post on WW eggless banana bread and Eggless banana and oats bread. So I was confident that, me as well as all of you also will love this delicate flavor simple breakfast bread. I wanted to play with the bread too so I take out one cup of batter and put a cocoa powder in it and give a marble effect. After all, I have good baker bloggers friends , I have to learn something from them. Right? So the effect and the taste is out of this world. Oh one more thing, I am allergic to walnuts so I put cashews in it but you can go with walnuts too.
Ingredients :
1 and half cups Whole Wheat flour (you can use AP flour too)
1/4 tsp. baking powder
1/4 tsp. Baking soda
pinch of salt
1 tbsp. cinnamon powder
3 tsp. cardamom powder ( I added 4 because of my love to cardamom)
1/4 cup broken cashews
1/2 cup sugar (since its bread , u don't need too much sweet, but if you like sweet, add more)
2 tbsp. oil
1/2 cup milk
2 ripe bananas
2 tbsp. unsweetened cocoa powder
Method:
Preheat the oven at 400 F. Grease your baking pan with oil in it and keep it aside.
Mix all dry ingredients in bowl. from Flour, baking powder, soda, salt, cardamom powder, cashews, leave some cashews out to top it off and sugar.
In a mixture, add peeled bananas, oil, milk and make a fine puree.
Now add this wet mixture in dry mixture and mix thoroughly.
Pour it in bread pan and reserve one cup of mixture.
Add cocoa powder in that mixture and mix it.
Then add this cocoa mixture in rest of the mixture and with butter knife , give swirl effect.
Top it off with rest of the cashews.
Put it in the oven and bake it till toothpick comes out clean around 30-40 minutes. check in between.
After its baked, take it out from the oven and leave it on counter top till its cold.
Remove it from the mold and cut it as per your choice, thick or thin slice. As per my suggestion, thick slices are better.
See the marble effect inside. Its awesome. Warm it when you needed, apply little butter or jam and have it as your breakfast or light snack too.

marbled cake looks fantastic and perfect. when it comes to 'eggless' and 'banana' together, it always becomes little dense for me with dairy products like milk and yogurt. I never get the light texture except my banana bread with oil. But you have nailed it.

Now I know the answer :) My grandfather always had his bananas with cardamom powder and ghee... Now I have to make a cardamom flavored banana bread :)
