Fried Tortillas with Cinnamon and Sugar - Bunuelos

I have to make this from such a long time, its such a easy yet delicious dessert from Spain.  Basically , you can fry corn tortilla and then dip them in the mixture of cinnamon and sugar and enjoy as it is or have it with ice cream, goes very well with mango , vanilla or just plain drizzle of Honey also.  You don't have to deep fry it, shallow fry works, even baked version is good too. So what are you waiting for , heat up the oil in the pan and let's start frying.



Ingredients :

6 Corn Tortillas
Oil for frying
8 Tbsp. Sugar
1 Tbsp Cinnamon (you can add more if you like more cinnamon, I like it more so I practically did half and half sugar - cinnamon combo.)

Method:

Mix the sugar and cinnamon and keep it aside.

Heat up the oil in the pan.

When its hot, slide one tortilla in it and cook till its nice and brown on one side, flip it and cook it on other side.

Take it out on paper towel so the access oil got socked.

After that put it the sugar - cinnamon mixture and sprinkle the mixture everywhere so it covered in sparkling sugary mixture.

Proceed with all same way.

You can just eat as it is or have it with Ice cream. We are more in to cookies n cream kind of family so had it with that flavor. but you can have it with your favorite ice cream.

Vegetarian Chicken Stir fry with Vegetables

Now a days its very easy to be a vegetarian, since its healthy to be a vegetarian and you can find lots of products in the market which taste, feel just like real meat so when some hardcore non vegetarian wants to change their life style and be a vegetarian , its not that easy but comparatively not that hard. Even for vegan and vegetarian , imitations meat products are very big and lots of varieties to choose from.  Since I had too many varieties on my hand rather in my freezer, I will come up with to use chicken in stir fry way.

Its very fast since we are stir frying all the vegetables and chicken. This particular dish will be done in less than 10 minutes if you have your rice ready or noodles, you will be done in no time for lunch or diner.





Ingredients : 

1 White onion chopped
Few big stalks of Bok choi, leaves and steams chopped
2 Garlic cloves - finely chopped
Few slices of Ginger, finely chopped
1 Carrot thinly sliced
5-6 Asparagus - 4 inches cut
1 tbsp Cornstarch
1 pack of Vegetarian chicken
1 tsp Oil
2 Thai chilies or regular green chilies finely chopped
1 Green onion finely chopped with white and greens seperated
1/4 cup Vegetable Stock
2 tbsp Soya sauce
1 tbsp Rice wine vinegar
1 tsp Sriracha
2 tbsp Sesame oil

Method : 

In a small bowl, combine the cornstarch and water , keep it aside. 

Add oil in the work, and stir fry ginger, garlic and green chili for a minute. Add all your vegetables, you can choose your favorite ones. and cook for 3-4 minutes. 

When vegetables are still crunchy, add vegetable broth and soy sauce, stir till it coats the vegetables. 

Add the chicken pieces and cook for a minute . 

Add vinegar, sriracha and Corn starch and let it thicken. 

Drizzle sesame oil and green onions and enjoy it with rice or noodles. 

I had it with stir fry rice.

No Bake, Egg less Gulab Jamun Cheesecake

I just love to make cheesecake but don't like baking part of it, so always try to create something without baking and if you are not baking, you are not using eggs too, so that's works for me too.

For this particular cheesecake, I have lot of leftovers gulab jamun , which I knew that we won't be able to finish simply by eating it, and for long I wanted to make cheesecake with it so it was perfect. Made it 3 pies (yes it was that much leftovers)  and used it for two separate occasions and everyone loved it.

Without baking, its very easy to make cheesecake.  In here , you will find my most of different types of no baked  cheesecakes.

Ingredients :

3 Cheesecake pie base
15 or more Gulab Jamun
2 Tubs of Whipping cream
3 8 oz. packets of Cream cheese
Chopped pistachios for decoration

Method :

Mix whipped cream and cream cheese in blender.

Take pie based and cut gulab jamun is half and placed in cut side down on pie based.




Spread the cream cheese mixture on top of it and put rest half of the gulab jamun on top of it.

Sprinkle chopped pistachio and freeze it for hour or so.

After that , take it out and cut it and enjoy it.

You can proceed with rest of the pie same way.

Mexican Style Scrambled Eggs (HUEVOS A LA MEXICANA) with Avocado Toast

Don't you get bored eating same kind of eggs in the morning? If you are a fry egg , then same old way you have to make it. If you are a boiled then yes same old , same old. If you are a scrambled egg one then again same old. So why don't try to make it this way, add some spice in your boring breakfast and let the day begin with some spice. I served it on the side with spicy guacamole toast.

Measurement for single serve eggs, if you want to make more you can adjust the quantities as per your taste.

If you like to try other flavor , try Thai Scramble Eggs too.



Ingredients : 

1 tbsp. oil
1 Small onion chopped finely
1 Jalapenos , seeded and chopped finely
 Tomato , seeded and chopped finely
2 Tbsp. Thinly sliced cilantro leaves
Salt & Pepper as per taste
1 Large brown egg ( you can use white also )

For Toast

Wheat bread slices , Toast, and fresh spicy Guacamole

Method :

Heat non stick pan on the stove on medium heat. When pan is heated, add oil in it.

Add onion, tomato and Jalapeno and cook till it softens.

Add Cilantro and eggs and Folding eggs so it has nice big chunks of eggs with all the other ingredients together. Cook till all the eggs are cooked thru around 3 - 4 minutes.

Take it out on plate and served hot with wheat toast with guacamole and tea / coffee and you are good to go till lunch time.
