Now a days its very easy to be a vegetarian, since its healthy to be a vegetarian and you can find lots of products in the market which taste, feel just like real meat so when some hardcore non vegetarian wants to change their life style and be a vegetarian , its not that easy but comparatively not that hard. Even for vegan and vegetarian , imitations meat products are very big and lots of varieties to choose from. Since I had too many varieties on my hand rather in my freezer, I will come up with to use chicken in stir fry way.
Its very fast since we are stir frying all the vegetables and chicken. This particular dish will be done in less than 10 minutes if you have your rice ready or noodles, you will be done in no time for lunch or diner.
Ingredients :
1 White onion chopped
Few big stalks of Bok choi, leaves and steams chopped
2 Garlic cloves - finely chopped
Few slices of Ginger, finely chopped
1 Carrot thinly sliced
5-6 Asparagus - 4 inches cut
1 tbsp Cornstarch
1 pack of Vegetarian chicken
1 tsp Oil
2 Thai chilies or regular green chilies finely chopped
1 Green onion finely chopped with white and greens seperated
1/4 cup Vegetable Stock
2 tbsp Soya sauce
1 tbsp Rice wine vinegar
1 tsp Sriracha
2 tbsp Sesame oil
Method :

In a small bowl, combine the cornstarch and water , keep it aside.
Add oil in the work, and stir fry ginger, garlic and green chili for a minute. Add all your vegetables, you can choose your favorite ones. and cook for 3-4 minutes.
When vegetables are still crunchy, add vegetable broth and soy sauce, stir till it coats the vegetables.
Add the chicken pieces and cook for a minute .
Add vinegar, sriracha and Corn starch and let it thicken.
Drizzle sesame oil and green onions and enjoy it with rice or noodles.
I had it with stir fry rice.
