Air fryer Buffalo Cauliflower

This recipe is as simple as it sounds, grab some cauliflower florets, dip it in to the buffalo hot sauce, sprinkle some garlic powder, salt and olive oil and airfry it and enjoy it with ranch dressing and celery or not a celery fan then make some bean salad just like I did and enjoy it. 

This is very easy to make and in under 20 minutes you are done with low carb and vegan dish. 

We had it for the light lunch and we loved it so much I made this after this 3 times.  I airfried it but if you don't have it then you can use regular oven and bake it , don't know how different the taste will be but it still be amazing that's for sure. 





Ingredients : 

1/2 head of cauliflower cut in to bite sized florets
1/2 cup buffalo sauce - I used Frank's Red Hot Buffalo wing sauce
2 tbsp. Olive oil 
1 tsp Garlic powder
1/2 tsp salt

To serve Ranch dressing and bean salad

Method : 

Cut cauliflower in to bite sized florets. 

In a big bowl, add florets along with buffalo sauce, olive oil, garlic powder and salt and mix it.

Grease your air fryer rack and arrange florets in single layer , don't overcrowded  the rack, work in small batched in your rack or basket. 

Cook at 375 F for 12 to 15 minutes or until its fork tender and slightly browned.

I like to move my rack to cook it from all side so I did it every 3 minutes. 

Serve warm with side of ranch dressing or what ever your favorite sauce is and enjoy. 

We had it with side of bean salad and ranch dressing.

Easy Pretzel Bites

My kids love Pretzel bites, one like salty and one like sweet one. So was looking for it to make it at home and feed them so I don't have to spend money outside and I can control sugar and salt both. 

Found this two ingredients dough recipe and things you can make with it its so awesome. Already made bagel, bread, naan and now this. 

I didn't have pretzel salt so I used pink Himalayan salt but if you have it , use it by all means. 

This are very easy to make and you can double the quantities as you needed. If you have self rising flour then you just need that and yogurt , if you don't have self rising flour then follow my recipe



Ingredients : 

1 cup AP flour
1 cup plain yogurt
1/8 tsp salt
2 tsp baking powder
1 tbsp. Salt to sprinkle on top
1/4 cup mixture of cinnamon sugar
1/2 cup boiling water
1 tbsp. Baking soda

Method : 

Put 1 cup and 2 tbsp of AP flour, salt and baking powder and yogurt in blender .

You can do it by hand also but dough will be sticky so its best to use blender. 

Mix till it forms the dough , if you think its too sticky add few more tablespoon of flour.

But dont add more, keep it in fridge for half an hour and then work on it if its too sticky.

Sprinkle dry dough on kitchen counter and take the dough out.

Knead the dough few times and form into a ball. 

Cut the ball into four parts. 

Roll each piece of dough into a long rope and cut each one small segments. Size is your preference but don't make it too big. 

By this time pre heat up the oven at 425 F. 

Dissolve baking soda in boiling water. 

dip the small dough segments into the baking soda mixture with the help of fork. Just make sure it cover from all side in that water and take it out, no need to keep it inside. 

Place it on baking dish or parchment covered baking dish. 

Bake it for 7-10 minutes or until its golden brown. 

Take it out and brush bites with melted butter first and depend upon your choice of sweet or salty, sprinkle salt or roll it in cinnamon sugar mixture. 

I did half and half for both. 

Enjoy as it is warm.

Spicy Tofu Sofritas Taco

Today's recipe is I guess all the vegetarians who goes to Chipotle have had it. Chipotle offers this as a vegetarian and vegan options for burritos or bowls or tacos or anything related to vegetarian and I loved it and always wanted to make it home so made it. And can not believe it how easy it was. If you are a Tofu fan then you will love it and if you are a Chipotle fan then you will overjoyed it. Since now you can make a burrito bowl with your favorite toppings. 

So Sofritas is nothing but the scrambled tofu with JalapeƱos in adobo sauce, you can make it at home too but since I had the can I used it. You can add little or more depend upon your choice of heat level and make it burritos, rice bowl. taco, quesadillas, breakfast tacos or loaded nachos, possibilities are endless. 

Today I am making simple tofu sofritas taco only. 




Ingredients :

1 Roasted poblano pepper
1-3 individual chipotle peppers canned in adobos sauce
2 tbsp. of adobo sauce
2 cloves of garlic
2 tsp cumin powder
2 tsp paprika powder
1/2 cup salsa
2 tbsp. oil
salt as needed
1 14 ox package EXTRA firm tofu
1/4 cup canned black beans
few strings of freshly chopped coriander leaves

To Serve:

4-6 soft tacos
guacamole
picked jalapenos

Method : 

To make sofritas sauce , put roasted poblano (without seeds and chopped) chipotle peppers, garlic, spices and salsa in a small blender and pulse till it become smooth paste

Press the tofu with a clean towel to remove as much water as possible, the drier its better. 

Once all the water is gone, scramble the tofu into small  bits and keep it aside. 

Heat a pan with oil in it at a high heat. 

Add the scramble tofu in it. If you see more big bites you can break it with the spoon. 

Cook it till it changes the color from white to yellow to little brown. 

Then add the sofritas sauce little by little , you don't need too much water in the sauce. 

I like it mine dry so I added little at a time to keep the consistency. 

Add black beans and mix it and taste the taste, if needed add more salt. 

Warm the soft tacos, add the stuffing of sofritas, sprinkle more coriander leaves, lime juice if you want it and side of guacamole and pickled Jalapenos and enjoy it
