Eggplant Parmigiana Stromboli

How about combining two favorite dishes in one? Love Eggplant parm and stromboli but don't like too much cheese in Stromboli so I made it with my leftover eggplant parm with little cheese and baked it and have it with warm marinara sauce on side and dinner is done. I always make more parm then needed and store it rest for the future use so you don't have to make again and again.

I have used store brought pizza dough but you can find my Pizza dough recipe here.

My Eggplant parm recipe here. One pound dough can serve 4 so if you need more or less you can adjust the quantity.

The only thing you need to do now its heat up the oven.



Ingredients : 

1 lb. pizza dough (ready-made or homemade)
16 slice of Eggplant Parm if you are making it for 4, one will have 4 slices
Few big chunks of fresh garlic
1 cup of Mozzarella cheese
1 cup Ricotta cheese -strained
1 Jar of Roasted Red Pepper Sliced


Method :

Heat up the oven at 400 F.

If you don't have leftover eggplant parm. prepare it and keep it aside.

Take the dough and make it a large rectangular shape.

Layer the roasted red pepper, eggplant, garlic, both cheese at the left-hand side of the dough, leaving about two inches of space of the side.

Some like to put marinara inside but I don't. If you want you can add 2 tbsp of marinara on top of the stuffing.


Grab the extra dough from the left-hand side and begin to fold and roll over the top of the ingredients until it goes overtop.

Begin to fold over the right-hand side of the dough, tucking as you go especially toward the ends of the stromboli.

The final creation looks much like a large stuffed burrito.


To get a nice brown and crisp crust, coat the outside in an egg wash.

Transfer it to a baking dish and put it in the oven and baked at least 20-25 minutes until its nice and golden brown.

Phat Phrik Khing With Soy Chicken and Green Beans (Thai Dry-Curry Stir-Fry) Recipe

Most of the curries in Thai cuisine is coconut based so when you need some dry curry it's very hard. This dry dish is full of flavor with red curry but without coconut milk in it but taste very good and it's going very well with just plain white rice.

In this curry, I have used soy chicken, but you can use tofu, regular chicken also.

Also, I have used can red curry sauce to make it quick but you can always use it homemade. We are going to make this in batches since we have to cook green beans separate and chicken separate and then add red curry and other spices and you are done.



Ingredients : 

3 Tbsp Oil
1 lb. Green beans, cut and trimmed
2 Soy Chicken breast cut in bite-size pieces or 1 box firm tofu
3 tbsp Red curry paste
1 tbsp Soya sauce
1 tsp. sugar

Method : 

Heat up a pan on high heat, add 1 tbsp oil and cook chicken / Tofu. Make it cook on all sides, take it out.

Add 1 tbsp oil and cook spring beans. Stir occasionally and cook till it becomes soft. It might take up to 3 to 5 minutes.

Add 1 tbsp oil, add red curry paste and cook for a minute. Add chicken and beans and add sugar and soya sauce and check the seasoning, if needed salt add it.

Serve it immediately with white rice, jasmine rice, or quinoa.

I had it with my quick stir fry quinoa.

Kimchi French Fries

We all love French fries but its boring, eating fries same way with ketchup or mustard. Here I have a twist with Kimchi, making it spicy and you can just have it as it is or have it with sriracha mayo, bulgogi meat, or make it like loaded nachos, add beans, salsa, sour cream, guacamole and go to Mexican direction. I am just giving you basic kimchi fries, you can go ahead and make your new versions of it.

For this, I used frozen french fries but you can go ahead and make your own.

I have a bottle full of kimchi to finish so I am coming up with the idea to use that one.

Once it's done, something else will come. 

So lets munch on this new movie munchies.


Ingredients :

1 small package of frozen fries
1 cup Chopped Kimchi
1 onion chopped in length size
1 cup shredded cheese
1 tbsp oil


Method:

Take your nonstick and add oil in it and put the onions in it.

Cook till it becomes caramelized.

Add chopped kimchi in it and mix it. Taste it to make sure you have enough salt in it.



Cook the frozen fries as per the direction.


Heat the oven at 375F.

Take your fries in an oven-proof bowl. Spread one layer of fries, add cheese and kimchi mixture, add another layer of fries and repeat cheese and kimchi. Add more cheese on top.

Bake it till cheese is melted for 10 minutes.

Take it out and let it cool for a few minutes.

Turn on the tv and binge on your favorite Netflix and munch on this.

I had it as it is but you can have it with a side of sriracha mayo, mustard, wasabi whatever way you like it.
