I always love greens, in main dishes or as a salad. Got bored with same spinach and Methi dishes. So wanted to try some different taste with these two main ingredients. so I thought why not to give make over to most famous dish Methi Matar Malai. So I added aachari masala and spinach in it and new dish born. You can add ready made pickle masala or even if you have bottle of spicy pickle, take 2 tbsp. of only pickle masala and use it. No need to make one if you don't have time to roast and grind it. But if you are prepared to make this dish and roast the whole spices and then grind it and add greens and have it with parathas or rice and diner is done. Will think about tomorrow 's diner tomorrow.
Ingredients :
1 bunch Methi leaves (washed and chopped)
1 bunch Spinach leaves (washed and chopped)
1/2 cup defrost Green Peas
1 onion chopped
1 tomato chopped or 2 tbsp. tomato puree
1 tsp. each ginger, garlic and green chili paste
2 tbsp. Cashew paste
salt to taste
1 tsp. red chili powder
1 tsp. garam masala powder
1 tsp. cumin coriander powder
2 tbsp. heavy cream / half and half/ evaporated milk / full fat milk (your choice)
3 tbsp. oil
For Aachari masala :
Roast and grind
1 tsp. Cumin seeds
1 tsp. mustard seeds
1 tsp. Fennel seeds
1 tsp. carom seeds / ajwain
1 tsp. fenugreek seeds
Or you can use readymade masala or only masala from your favorite pickle.
Method:
Heat a non stick pan. Add oil in it. Add onion and cook till it pinkish in color.
Add tomato , ginger , garlic and green chili paste. Cook for few minutes.
Add grind masala, all powder masala and cashew paste and cook till oil leaves the sides.
add Both greens and peas and mix it nicely.
cook till there is no water from greens.
Add salt and cook for one more minute.
Before shutting off the gas , add heavy cream or what ever dairy product you are using. Mix it nicely.
Serve hot with warm parathas or jeera rice.
