No party or get together is complete in my house without dessert. I am sure that's everyone's story. To make cheesecake I always have cream cheese in my fridge. It comes very handy when you want to whip up something real quick but delicious. This cheesecake requires no baking or eggs and done in 5 minutes and set up in two hours in fridge while you make other preparation for party. A crunchy graham crackers crust is layered with a cloud like pineapple infused cream cheese filing and you are done. I like to do it in aluminium dish so when you are done with it no clean up needed too.
Ingredients for the crust:
1 cup graham crackers crumbs (you can use chocolate wafer cookies or any flavor wafer cookies)
2 tbsp melted butter
For the filling :
1 (8 oz. ) package cream cheese
3 tbsp sugar
8 oz pineapple can (drained)
1/2 tsp vanilla extract
3 tbsp thawed whipped topping
For the garnish:
few dollops of whipped toppings (optional)
few pieces of pineapple (optional)
Method:
In your serving dish mix together crust ingredients, mix it well and put it in fridge while you prepare your filling.
In a large bowl, with an electric mixture, beat the cream cheese and sugar on medium speed until creamy and smooths, at least for 3 minutes.
Add in pineapple and vanilla and mix to combine.
scarping down the sides of the bowl as needed.
Using a rubber spatula folding whipped topping until it well combined.
Take out serving dish and spread it on evenly on dish.
Decorate with pineapple pieces and put it back in fridge for 2-3 hours.
At the time of serving if you wish you can add more whipped topping and serve it.
Enjoy.
You can make it with mango pulp and mango pieces, kiwi , strawberry, blueberry any season fruit.Just adjust the sugar with that fruit.
You can make this in individual serving also. Put the crust in individual glasses and pour the filing and fridge it.
