Today I would like to share one of the famous kachori from my state. We used to do pigeon peas stuffing but I don't like to stuff that cause I always eat that, I wanted to try something new and then I thought of making it with frozen sweet corn. You can eat it as kachori with chutneys or you can make a chat out of it or add hot misal mix on top of it and garnish with boiled potatoes, sev, chutneys and you are in chatpata heaven.

Ingredients:
For The Dough
2 cups AP flour
Salt to taste

1 tsp baking powder

For the filling
1 cup boiled and mashed corn
2 green chilies chopped
1 tsp cumin seeds
1/2 tsp coriander powder
1/2 tsp ginger paste
1 tsp chat masala
1/2 tsp garam masala
1/4 tsp turmeric powder (haldi)
1/2 tsp chill powder
1 tsp lemon juice
Salt to taste

Method:
For the filling
Now heat 2 tbsp oil in a pan then add cumin seeds and saute for 1 minute.
Add the ginger paste and green chilies then fry again for 1 minute.
Add the boiled corn, all powdered masalas,lime juice and salt then cook for another 1 minute.
Add chopped coriander and keep it aside.

For kachoris
Mixing the plain flour with enough water and 1 tsp oil then knead it into a soft dough.
Divide the dough into equal portions and roll them into 4" diameter thick circles (if needed dust with plain flour).
Place 2 tbsp of the prepared filling in the center of the dough circle then close the sides together and seal it tightly.
Heat oil in a pan and deep fry the kachori's on medium heat till golden in color.

Fry 3 at a time so kadai don't get crowded.
Drain on a paper napkin and serve it hot with chutneys or as a chat dish. A choice is yours.
