Well who don't like raw mango, just cut it and sprinkle some salt, red chili powder, crushed cumin powder and I can eat it as it is or make a chutney out of it. My mom used to make this curry since then its our favorite dish. that's different story that whatever she made we loved it and still loving it so when ever I have a chance I create her dishes and enjoy it. For this particular dish you need raw mango, inside pit is soft or hard that's find, you just have to use the fruit. This is going to be sweet and spicy curry so when you are adding red chili powder add it more than usual because you are going to add sugar/ jaggery to balance out the sourness of mango and spiciness of chili powder. Quantity of sweet is depend upon how sour your mango is, so first test it and then add it in pan so you have idea how much sweetness it required.
Ingredients :
1 Raw mango cut in cubes
1 medium onion cut in cubes
1 tsp whole cumin seeds
1/2 tsp turmeric powder
1 and half tsp red chili powder
1 tsp cumin coriander powder
salt to taste
1/3 cup shredded jaggery or sugar (depend upon sourness of mango)
2 tsp oil
Method:
Cut mango and onions and keep it aside.
Heat a pan with oil in it.
When heated add cumin seeds, when its crackle add onion.
Cook till its soften up.
Add powder masala and mix it and add mango in it.
Add 1/3 to 1/4 cup of water in it and add salt and mix it and cover the lid and cook till water is gone and mango is cooked.
When there is not much water left, add jaggery or sugar in it and mix it and cook till gravy thickens , at least two minutes.
Check the seasoning if needed more sweetness add it otherwise shut the gas off.
Serve hot with chapatti or rori.
