We all love Bruschetta, so why not to marry those flavor in pasta? So I made this diner in for just four of us and we love it. I added other vegetables in pasta to give a little crunch and otherwise it will be just boring pasta in tomato sauce. You can add chicken , seafood or your choice of vegetables too.
This is just a way to show you how you can make Italian diner for your loved ones without going out and in a budget too.
We started off with chocolate coated strawberries.
Melt some chocolate in microwave or double boiler and dash of butter in it. Roll strawberries in it and put it in fridge till it hardens. Enjoy after 15 minutes.
then we had Caprese dip.
Then for main course had this pasta.
Ingredients :
1/2 box WW Penne pasta
1 cup chopped carrot, onion, red pepper, artichokes
4 finely chopped garlic
2 cups bruschetta mix
2 tbsp. olive oil
few flakes of red chili
Method:
Boil pasta as per package directions, keep it aside.
In a pan, add oil, add garlic and cook for 30 seconds.
Add all the vegetables and cook for 2-3 minutes.
Add bruschetta mix and pasta and cook for 3 minutes.
Serve it hot with sprinkle of parmesan cheese and red chili flakes.
and to finish it off, had grilled pineapple with brown sugar and top it with mocha cake rolls with whipped cream toppings.
Oh this was our V day diner.
