Gujaratis love their farsan. Farsan means snack fried or baked any thing. Handvo is one farsan which every house has different recipe but the outcome is always delicious. You can add any grated vegetables in it and most fussy kids even don't know that and eat it. Only thing for this dish is that you have to think and prepare for it day in advance because you have to soak the dals and then you have to let it fermented for whole night. But when you wait for something for so long then it outcome is always delicious. So lets soak dals first and then we can go ahead and make it.
Traditionally you can make it in big pot with full of sand and above that you put your pan full of mixture and let them cook slowly but now we all use oven, its fast and tasty too. But I dont like to make it one big cake of it so I try to make this in cupcake so I can watch my portion too.
Ingredients:
1/4 cup toover dal
1 tbsp urad dal
1 tbsp green mung dal
1 tbsp chana dal (split bengal gram)
1/2 cup rice
1/4 cup sour yogert
3/4 cup grated carrot
1 tsp kasoori methi
3 tsp oil
2 tsp lemon juice
a pinch of soda bi carb
1/4 tsp chili powder
1/4 tsp turmeric powder
1 tsp ginger and green chili paste
salt to taste
For Tempering :
1/2 tsp Mustard seeds
1/2 tsp Sesame seeds white
1/4 tsp Hing
2 red dry chili
Method:
Clean, wash and soak all the dals and rice together in enough water for 4-5 hours. Drain and keep aside.
Blend it all soaks lentils in mixture to a smooth texture.
Transfer the mixture in to bowl and add sour curd and mix well and leave it on the counter overnight for fermentation.
Next day, in the bowl add grated carrot, kasoori methi, 1 tsp oil, lemon juice, soda bi carb, chili powder, turmeric powder , ginger and green chili paste and salt and mix it very well.

Heat a small non stick pan or Vaghariyu. Add remaining two tsp oil and add mustard seeds in it. when it crackles add sesame seeds, whole red chili and hing.
Pour that over mixture and mix it.
Now if you are using glass or metal muffin pan, you have to spray it with oil.
Pour the mixture in muffin pan and bake it at 350 for 25-30 minutes until toothpick comes out clean.
Leave it on the counter for five minutes. Traditionally it seves with green chutney but I like it with pickle ginger and green chili and salsa.
