Well I had half a block of tofu left and didn't wanted to make same old south Asian dishes. so was thinking what to make for lunch and I saw that I have lot of bread slices to finish, so think that lets make some sandwich. So I smashed tofu and add boiled potatoes and peas and spices and put it in two bread slices and here come my healthy sandwich for lunch. This stuffing is very versatile. You can use it for sandwich, wraps, parathas or even for dry subji.
Ingredients :
8 slices of WW bread
Half block of firm tofu (you can use silken too)
2 boiled potatoes
1/4 cup boiled green peas
salt to taste
1 small onion chopped
2 tsp. oil
1 tsp. green chili paste
1 tsp. ginger garlic paste
1 tsp. red chili powder
1 tsp. turmeric powder
1 tsp. garam masala powder
lime juice and chopped fresh coriander leaves
Method:
In a bowl, take tofu, boiled peas and potatoes.
In a small pan, add oil and add onion and cook till it becomes brown.
Add both paste, all powder masala and salt and cook for 3 minutes.
Add it in bowl of tofu.
and mashed it with potato mashed. Add lime juice and coriander leaves.
Mix thoroughly.
Heat a sandwich maker.
Take two slices of whole wheat bread.
Put generous amount of stuffing on bread.
Put another slices of bread and cook till its brown.
Take it out and cut it from middle and serve hot with side of green chutney or ketchup or eat as it is.
Lunch is served. order up.

ReplyDeleteCompared to panneer, we over here use lots of tofu. And there's so many different types staged up in the hypermarkets. Tofu is particularly very healthy and I see how it has transformed into a versatile dish. Bread is simply perfect, what more when baked/cooked in the sandwich maker.
