Who don't like grilled cheese sandwich and soup? This is Mexican version of classic American dish. It is full of protein and flavor and very filing too. Quesidilas are grilled sandwich but instead of bread , we used tortillas. You can just use plain cheese to make quesidilas or add any grilled vegetables or other proteins in it. I had all the vegetables in soup that's why I just added green chili, onion, garlic , corn and ginger. You all by know my love of soy granules. I was so tempted to use soy granules in soup, I took it out also but then put it back and just stick to true contents of soup. But if you have leftover chicken or any other protein go ahead and add it.
Lets make soup first.
Ingredients:
1 can black beans (washed and rinsed)
1 onion chopped
1 capsicum chopped
1 carrot chopped
1 cup of corn (frozen or fresh)
2 cups of vegetable stock
half zuchinni chopped
1 jalapenos chopped
6 cloves of garlic chopped
2 tsp of taco sesaoning
1 tsp of chipotle sauce
few dashes of tabsco sauce
sour cream to garnish
salt to taste
1 tsp oil
Method:
Heat a non stick pan. Add garlic and jalapenos in it.
Add onion and other vegetables along with black bean .Leave 1/4 cup beans aside.
Add vegetable stock and mixed it all.
Add taco seasoning, chipotle sauce and mix it very well.
Cover and cook for 5 minutes.
After that check the sesoning .
In a blender add those reserve beans and one big spoonful of soup and blend it and make a fine puree of it and add it back in soup.
Mix it nicely and cook for minute or two.
Turn off the gas.
Quesadillas :
Ingredients :
4 whole wheat tortillas
1 finely chopped onion
1 green chili
1 spoonful of ginger chopped
1 /2 cup corn
4-5 cloves of garlic
1 cup of cheddar cheese
Method:
cut all the vegetables and mix it in a bowl.
Heat a dosa pan on medium to low flame.
Add one tortilla , warm it up one side and turn over.
Spread cheese on tortilla and spread stuffing mixture on top of it.
Let the cheese melt for few seconds.
Fold the tortilla and make brown on both side.
cut it in half and serve it along with soup.
Add dollop of sour cream in soup.
Diner is done.
You can use two tortillas to make one sandwich too.
Spread stuffing and cheese on on tortilla and put another tortilla on top and then flip it and make it brown on both sides and cut it in triangle and serve it.Or you can use only one the way I use it.
This dish is good for two people.
