so all of you had too many sweet dishes over the last few days, try this spicy and healthy Thai soup. We all love to make Thai food with its all different kinds of curry, sticky rice or stir fry. But I was not in the mood of making rice and curry and it was cold outside and need something which have everything but its one pot dish. So I made red curry soup, put all the vegetables in it along with noodles and got myself a soothing, delicious, comforting diner in one bowl. You can add coriander leaves, Thai Basil , Lime on top of it, but it looks so yummy I could not wait for anything, just plate it took a picture and dig it. This soup is the best remedy for cold. I give you recipe , you do all the presentation.
Ingredients:
1 tsp. coconut oil
1" of fresh ginger, peeled and cut into slivers
1 red peeper cut into thin strips
1 carrot cut into matchsticks
1 each yellow and green squash cut it in thin strips
1 purple eggplant crescent shape
2 tbsp. red curry paste
6 oz. coconut milk
1/2 cup vegetable stock
1 tbsp. Tamari sauce
boiled brown rice noodles or your choice noodles
For decoration:
few strings of coriander leaves, lime, basil leaves (I didn't use it)
Method:
Heat a big pot on gas on low flame.
Add coconut oil , add ginger and cook for few seconds.
Add carrots , red peppers, both squashes, eggplant and curry paste.
Stir it nicely.
Add coconut milk and put the flame on medium. boil it for 5 minutes.
Add tamari and vegetable stock. cook it for another 2 minutes.
Add noodles and cook for 2 more minutes.
To serve :
Get big spoonful of soup in soup bowl and top it with coriander leaves, basil leaves and lime wedges.
Even without also it taste awesome.
