There are lot of versions or ways to make chili. It has nothing to do with Indo Chinese dish, or spicy pepper. This is a Mexican thick soup dish , which is eaten with either quesadillas or corn cakes or corn bread. I got this packet from Swathi's one of the giveaway event along with other beans. Since I was making Mexican diner, Fajitas , needed something else to go with it. Because alone fajitas is not good for diner, so made this soup along with fajitas. You can have it for light supper just soup and bread too. It comes with seasoning but I did not trust packaged one so I added my seasoning in it.
Ingredients :
1/2 packet of 15 bean chili
1 onion chopped
4 garlic chopped
1 jalapenos deseeded chopped
1 chipotle pepper in adobe chopped
2 tbsp. chili seasoning
1 tsp. cumin powder
2 tbsp. tomato paste
salt to taste
3 tbsp. oil
you can add different color peppers too.
Method:
Wash and soaked beans in plenty of water for 8 hours.
Once its all soaked and big, you can either pressure cook it till its done or you can cook it on stove top with water in it. I prefer pressure cooker so it was done in two whistle.
When the cooker is cold, take the lid off.
Heat a big pan , add oil in it. Add garlic and jalapenos and cook till nice aroma comes.
Then add onion in it and cook till its soften.
Then add cooked beans along with chipotle peppers, seasoning, salt and tomato paste.
Add enough water to cook the beans in the spices for good 10-15 minutes.
To serve , take a bowl , add chili in it, put a dollop of sour cream, chopped coriander leaves and chopped green onions. or with Guacamole Or you can have it as it is.

I see the mixture of beans in the packet. Its definitely convenient rather than buying individual varieties in quantities. The soup is just spot on and for us, love to dip with crispy toast.
