Seyal Phulka – Leftover rotis in tomato garlic gravy

There is always 3-4 rotis leftovers at the end of the week. So I have make them gujju style dish called vaghariyu but got bored with same recipe so was looking to try new recipe where I can use my leftover rotis. In childhood mom used to roll up and deep fry those rolls or leave it match stick shapes and deep fry it but bachpan is gone and now all this healthy funda came in life so frying is not that much happening in the house, once a while I do fry puris as per my kids demand, which is now a days every weekend demand and I make an excuse and not doing it. Anyway so back to leftovers, found this delicious way to use rotis and tried it and have to share it with you all. I used my 3 left overs rotis which was two days old but after marrying in gravy and masala didn't feel like I am eating days old rotis. So next time you have leftover rotis or parathas use it this way.

Ingredients :

3 leftover rotis – bite size pieces
1 tsp. ginger, garlic and chili paste
½ chopped onion
1 tbsp. tomato paste
Few curry leaves
½ tsp. mustard seeds
Salt as per taste
1 tsp. turmeric powder
1 tsp. cumin –coriander powder
2 tsp. oil
Few fresh chopped coriander leaves
1 to 1 and ½ cup water, depend upon how old and dry your rotis are , add water as per that


Method:


In a pan , add oil. Add mustard seeds, when it crackles, add onions in it and cook till its little pink.
Add curry leaves, then add ginger, garlic, and chili paste along with tomato puree, cook for a minute. 
Now add both powder masala and salt and mix it, add chopped rotis along with water. Again depend upon how dry your rotis are, adjust the water.
Cook on low flame till water is gone and roti become soft.
When its done, add coriander leaves and serve hot.

Cookies and Cream Kulfi | Oreo Kulfi

I saw nice recipe of using oreo in dessert and specially making ice cream.But I wasn't sure about ice cream and its quality without ice cream maker, no matter how fool proof recipe is.  For me, my kids just love cookies and cream ice cream, they can finish Turkey Hill ice cream container in summer in no time. So I was not keen on making ice cream because I knew my picky eater will not eat it but I am sure about kulfi, that I can make nice and I know who can finish that, ME. So get my ingredients together, make it and chilled it and enjoyed it. You can make ice cream but my theory is if I am getting from store that particular item in less money and kids loved it why do I experiment at home ? so to save $1.99 I am not interested to make ice cream but kulfi is ready.

Ingredients :

2 cups heavy cream
2 cups whipped topping - Yes
Sugar as needed because oreo are pretty sweet
6 oreo crushed  - leave some big pieces if you like

Method :

Warm the heavy cream, repeat, warm not boiled.
Take it out, mix whipped topping, if adding sugar, add it now, and mix it with beater so whipped topping mixed nicely.
Add crushed oreo in it and put it in kulfi mould.
Put it in freezer for 8 hours, take it out from freezer after that and rub the mould in between your hand, take out kulfi and enjoy it while watching TV.

Strawberry Sparkling Water | Strawberry Soda

Now a days everyone like flavor water, fill up the pitcher with mint, cucumber , orange and lime wedges and drink it. Personally I don't like that because it becomes tart and Water does not smell fresh. Instead you can keep pulp ready and whenever you want it , you can add carbonated water in it and drink it or just add lime juice and make a lemonade out of it.  On Thanksgiving sale, we got soda maker, since then making carbonated water / club soda is very easy and fun. Kids love that and we can experiment with all kinds of flavors too. Its like making your own soda flavors. So this is kind of strawberry soda too. I make puree of strawberries with sugar and make a fine puree and sieve it so it has only pulp and not  seeds. You can lime juice and make strawberry lemonade or add sparkling water and make soda. So that's the recipe. You can adjust sugar as per the tartness of the strawberries.

Ricotta Peda

My sister made this peda and posted on her blog, before posting she send me pictures also and since then I was craving for that. Luckily I had ricotta in fridge which I need to finish it up so use that to make peda and enjoy it. Its very easy compare to milk peda. I was done in 25 minutes.

Ingredients :

4 cups ricotta cheese
7-8 tbsp. sugar or as per taste
Pinch of cardamom powder
Roasted kesar (saffron)
Few cashews or any nuts you prefer

Method:

In a big pot, add ricotta and sugar and cook till it becomes lump.
Meanwhile add cardamom powder and saffron in it.
When it leaves side and become one big lump, take it out in dish and when its warm enough to hold it, give a shape.
When you make circle, put a dent in middle and add nut in there. I used cashew but you can add pista or almond or anything.
Serve at room temperature, store leftover in fridge.

Microwave Huevos Ranchero

This is a very famous Mexican breakfast dish, traditionally you can cook in pan along with refried beans but here I made it easy while putting everything in one dish and microwave it and enjoy your breakfast. I had this for my breakfast and loved it. I had this when I was pregnant and in hospital, every morning I had this once I started eating after my C section. Not with beans though because that time beans were not good for me but really enjoyed filling breakfast since then it becomes my favorite breakfast. You can add everything in egg and microwave it or you can layered it, its your choice but I put everything in eggs and beat it and enjoyed it. If you don't have tortilla , you can use tortilla chips.

Ingredients :

2 Eggs
1 tbsp. refried beans
2 tbsp. Enchilada sauce
2 tbsp cheddar cheese
1 tbsp. salsa
salt and pepper
1 corn tortilla
Few slices of Jalapenos
Dash of hot sauce

Method:

Grease your microwave dish.
Spread tortilla in dish.
whisk egg and then add enchilada sauce, refried beans, salsa, cheese, salt and pepper.
Pour this over tortilla.
Microwave for minute and half or as per your microwave heating.
Take it out when egg is fully cooked.
Serve it immediately with sliced jalapenos and more salsa on top.

Vegetable Hakka Noodles

This is everyone's favorite noodles, am I right? My son loves noodles, when I was making this, he was so happy that he wanted to eat that time only. I told him to wait. Thanks to Chinese Immigrants in West Bengal , now a days we enjoyed this Indo chinese dishes. You can have it for lunch, dinner or even for your midnight snack. Add your favorite vegetables but traditionally colored peppers, cabbage, onions and garlic, ginger and green chilies but for non vegetarians can add shrimp, chicken or your favorite meat and oh ya, vegetarians can add tofu too.

Ingredients :

1 packet Chinese Noodles
2-3 sliced green chilies
1 tbsp. thinly sliced ginger
2 tbsp. finely chopped garlic
1 onion thinly sliced
1/2 cup thinly sliced cabbage
1 carrot thinly sliced
1 cup red, green capscicum sliced
2 finely chopped spring onion
2 tsp. soya sauce
2 tsp. vinegar
1 tsp. chili sauce
2 tbsp. oil
If needed salt and pepper to taste

Method:

Bring water to boil for noodles.
cook the noodles and keep it aside.
Cut all the vegetables and keep it aside.
Heat a wok, add oil in it.
Add chopped garlic, ginger and chilies and cook for a minute.
add all vegetables, quick saute for a minute.
Add soya sauce, chili sauce and vinegar.
Mix everything nicely.
Add noodles and check the seasoning, if needed salt and pepper.
Mix  everything nicely and garnish with chopped spring onions.
Enjoy your food.

Mint Coconut Water

This time for SS series is Drinks and I just love coconut water , so I click this. Make ice cubes of coconut water and mint in it, when its hard, take it out in glass, pour regular coconut water in glass on the rocks. The mint flavor and coconut is out of this world. Wait till all the coconut water melts, its heaven.

Mexican Quinoa Bowl

When I made couscous bowl, I was very happy that it was quick and flavorful and filling too. so next stop was quinoa, well made it and enjoyed it, I just love this one pot dishes, so stay tune for the more this kind of recipes. For this I added mexican ingredients and flavors but you add your choice of ingredients and make this one pot dish too.

Ingredients :

1 cup quinoa
1 cup vegetable broth
1 tbsp. olive oil
2 cloves of Garlic chopped
1/4 cup black beans cooked and rinsed
1/4 cup corn
1/2 cup roasted tomatoes chopped
Salt and pepper as per taste
1 Jalapenos finely chopped
1 Avocado chopped
1 tsp. paprika or chili powder
1 tbsp. taco seasoning
Lime juice as per taste
Fresh Chopped coriander leaves

Method:

Heat olive in a large pot, add garlic and jalapenos and cook till minute.
Add quinoa, broth, black beans, tomatoes, corn, paprika powder, salt and pepper.
Bring it boil , cover and reduce heat and simmer until quinoa is cooked and its tail comes out.
Stir in avocado and lime juice and cilantro.
Serve immediately and enjoy it with glass of juice.
