When I made couscous bowl, I was very happy that it was quick and flavorful and filling too. so next stop was quinoa, well made it and enjoyed it, I just love this one pot dishes, so stay tune for the more this kind of recipes. For this I added mexican ingredients and flavors but you add your choice of ingredients and make this one pot dish too.
Ingredients :
1 cup quinoa
1 cup vegetable broth
1 tbsp. olive oil
2 cloves of Garlic chopped
1/4 cup black beans cooked and rinsed
1/4 cup corn
1/2 cup roasted tomatoes chopped
Salt and pepper as per taste
1 Jalapenos finely chopped
1 Avocado chopped
1 tsp. paprika or chili powder
1 tbsp. taco seasoning
Lime juice as per taste
Fresh Chopped coriander leaves
Method:
Heat olive in a large pot, add garlic and jalapenos and cook till minute.
Add quinoa, broth, black beans, tomatoes, corn, paprika powder, salt and pepper.
Bring it boil , cover and reduce heat and simmer until quinoa is cooked and its tail comes out.
Stir in avocado and lime juice and cilantro.
Serve immediately and enjoy it with glass of juice.
