Chana Masala Dosa / Black Chickpea and Potato filled savory Crepe

In my house , I have to make everything healthy. So simple masala dosa don't work here, I always end up adding some protein or other vegetables in it. some times I add kabuli chana or carrots. This time I added black chana in it, I always eat only masala while making for others because I just love it. Don't need dosa or puri to eat that flavorful masala. So try this not your regular masala dosa at your home when you are in mood for some south Indian food.





Ingredients :

3 potatoes (boiled in microwave and keep it aside)
2 onions finely chopped
1/4 cup boiled brown chickpeas / kala chana
salt to taste
few curry leaves
1 tsp. jeera / cumin seeds
1 tsp. Turmeric powder
1 green chili finely chopped
2 tbsp. oil
1 tsp. udad dal (white spilt lentil)
lime juice to taste
Fresh chopped coriander leaves
2 cups Dosa batter



Method:

Heat a pan. Add oil in it.
Add jeera in it, when it changes it color, add green chili, udad dal, curry leaves.
cook for few seconds.
Add onions and chana and cook and cover for 2-3 minutes.
Mashed boiled potatoes and add it in.
Add salt, turmeric powder and cook for 3-5 minutes on medium low flame.
When its done, add lime juice and coriander leaves and mix and keep it aside.

Take your dosa pan, Take one big ladle of batter and make a big circle in it just like crepe.
Cook till its leaves the sides.
Add the chana masala in it and fold it from both sides.

Serve hot along with sambhar, coconut chutney.


 I had it with Mint coconut chutney, Garlic Black Pepper Rasam, Sambhar.

Garlic Black Pepper Rasam

Until now I was making and enjoying sambhar only for my south Indian dishes. But when I saw nice rasam recipes prepared by my fellow bloggers, I was also tempted to make it. It was perfect for cold weather and our bad throat also. I made this before also but that time didn't took any pictures so next time when I made it , I make sure to share it with you all so you can also enjoy it. It is very simple yet spicy and flavorful too. If you are feeling down with fever or have a cold , this is a perfect remedy. I just had one bowl of hot steamy rasam and my sinus open up and cold was gone instantly what antibiotic didn't do , this rasam did it. This is my version , I am pretty sure, its not authentic way to make it so all suggestions are welcome.

Ingredients :

5-6 cloves of garlic
15-20 black peppercorns
1 tsp. Jeera / cumin seeds
1 tbsp. tamarind paste
salt to taste
fresh coriander leaves chopped for garnish


To temper :

1 tsp. oil
1 tsp. mustard seeds
few curry leaves
1 green chili slit
1 dry red chili
pinch of hing
1 tomato chopped (big or small your choice)

Method:

In a pastel , crushed garlic and peppercorn, jeera along with little bit of salt. Adding salt it will be easier to crush it. You can use mixer too but I like chunky.

Add tamarind paste in 1.5 cups of hot water and mix it and keep it aside. You can make fresh too but I always use paste.
Heat a pan , add oil and add one by one ingredients mentioned in "To temper".
Cook till tomatoes are little cooked but not mushy.
Add crushed garlic mixture and cook for 1 minute.
Add tamarind water and 1.2 cup more water.
Cook till you get froth on top.
Adjust salt in it.
When its start to boil, add coriander leaves and cook for 2 minutes only.
Serve hot as it is or plain rice or dosa or any south Indian delicacy.

Margherita Pizza Dip

This is a dip or pizza , you have to decide. Because its taste like a pizza , acts like a dip so what not to love? I didn't had fresh basil so I used dried one but if you can find fresh please use it and it will make this dip more yummier. Its nothing just put the ingredients in dish and baked it and enjoy with any crusty bread, breadsticks, bagel chips. We had it with bagel chips.

Ingredients :

8 oz. Ricotta
8 oz. Italian blend grated cheese
1/2 cup grated Parmesan cheese
salt and pepper to taste
fresh garlic and jalapenos to taste
1 cup bottle marinara sauce
4 oz. fresh mozzarella, sliced
fresh basil for topping or dried one
for serving , bread sticks, bagel chips, fresh loaf.

Method:

Preheat oven to 400F.
Stir together ricotta, Italian and Parmesan cheese in a large bowl. season with salt and pepper and chopped garlic and jalapenos.
Evenly spread cheese mixture in a deep dish pie plate.
Spoon sauce over cheese. Leaving a clean border around edge.
We have best marinara sauces in the grocery stores so I don't bother to make home made but if you prefer home made , by all means use it.
Top with mozzarella slices.
Bake about 20 minutes or until cheese is bubbly and golden brown.
Top with basil or dried herbs and serve with bread sticks for dipping.

Brown Rice Kheer / Pudding

I love thick varieties of Pudding or kheer as we Indian says. I made this kheer before on trial basis and my huby loved it so when I was having guest for diner , without much more thinking I made this and it was better from last time, so I have to click it and share it with you all. First of all its healthy , because it has brown rice in it and its not soft like white rice pudding, it has crunch and chewiness in it so it become more tasty. He said I want in fridge for all the time. I said we will see. I used condensed milk for sweetener but you can use regular sugar, brown sugar , date or fig puree. Possibilities are just beyond imagination.

Ingredients :

1 cup cooked brown rice (cooked till its 90% done)
I used this brand because it cooks in 10 minutes.
1/2 can condensed milk
1 tbsp. cardamom powder
few chopped nuts (raisins, almonds , cashews)
2 cups milk (use almond, soya or coconut milk too, if you want to make vegan)
cheery for garnish (optional)

Method:

Heat a thick bottom pan , Add milk in it and wait till it boils.
After first boil, add cooked rice and stir.
when the milk is thicken add condensed milk, cardamom powder and nuts and make sure you keep on stirring so it doesn't stick on bottom.
When its thick enough , take it off the flame and take out in container.
When its completely cool, put a lid on top and put it in fridge for good 2-3 hours.
At the time serving, take short glass, pour 3/4 pudding in glass, sprinkle some finely chopped almonds then cheery  and enjoy.

This will satisfy your craving for sweet 100%, try and tested. Enjoy.

Soya Aloo Matar / Soya Potato Green Peas Curry

Every one makes aloo matar, but my love for soya won't let me cook anything without it. so I added soya in it and believe me, it changes the whole simple dish in to new dish. You can make this dish without soya too. And depend upon your taste you can make less or more gravy too. I was having with dal so didn't make too much gravy but that's the only dish you are making and having with rice, go ahead and make some gravy to eat with it. Its simple , easy yet tasty dish. You can add paneer and make it matar paneer.

Ingredients :

2 small potatoes , cubed
1/2 cup frozen green peas
1 /2 cup soaked and squeezed soya granules
1 onion - finely chopped
4 almonds
1 small cinnamon stick
5 cloves
1 tbsp. khas khas (poppy seeds)
1 tbsp. whole coriander
8 black pepper
2 green cardamom
2 tbsp. oil
2 tbsp. tomato puree
1 tsp. garam masala
1 tsp. red chili powder
green coriander for garnish
salt to taste

Method:

Make a powder of Almonds, cinnamon sticks, cloves , khas khas, coriander, black pepper, cardamom.

In a pot, add oil and add onion. cook till it changes color, add tomato paste and mix it.
Then mix powder of almonds and other spices.
Add garam masala and red chili powder and cook for 2 minutes.
Add potatoes and peas, soya and add water .
cook till potatoes are done. You need thick gravy when its done, take it off the stove and add coriander leaves and serves hot with Indian breads or rice.




You can add turnips instead of potatoes or any root vegetables too.

Moong dal with Muli ki bhaji / Yellow Spilt lentils with white radish greens

I have some soft corner for the yellow split greens because its takes very less time to cook and goes with any thing means you can add any greens in it and still it taste awesome. I tried with spinach , kale and methi, today I had it with White radish green leaves. You can substitute with your favorite lentil and greens too.

Ingredients :

1 cup clean and washed yellow spilt gram / Mung dal
1  cup radish leaves, washed and chopped

1 small onion chopped
1 tomato chopped or 2 tbsp. puree
1 tsp. mixed ginger, garlic and chili paste
1 tsp. garam masala
1 tsp. red chili powder
1 tsp. turmeric powder
1 tsp. Clove powder
1 tsp. Jeera / Cumin seeds
2 tsp. oil
pinch of hing
salt to taste
lime juice to taste

Method:

Heat a pressure cooker on stove.
Add oil in it, when its hot , add jeera / cumin in it. When it changes its color, add onion along with hing.
Cooked till it pinkish , add tomatoes , ginger garlic paste and all powder masala.
Cook for minute or two till oil floats on top.
Add dal and greens , salt and enough water to cook it.
Keep it on high flame for one whistle and then on medium flame let it cook for 8-10 minutes
Let it air go by itself.
Before serving add lime juice and serve along with plain rice or have it as a side dish of any dry vegetable.
