Teriyaki Mock Chicken With Noddles & Vegetables

When you have Mock meat on sale at the supermarket, you have to fill up the freezer so it can last till next sale. I did the same thing, one day I saw the product its on sale so I got it all and now making use of it.

First comes, Mock chicken packets, this product I used it before so I knew what to expect. So I made chicken with noodles and lots of vegetables. I didn't want to overpower the dish with lots of species or sauces so just keep it simple with teriyaki sauce since it was for me and my daughter, I know she loves sweet based sauces so Teriyaki sauce was the best choice. She loved it and we had a perfect take out diner at home. We had it with side of spring rolls and duck sauce.



Ingredients : 

1 Packet of chicken
1 Carrot chopped
Few Florets of Brocooli
1/2 inch sliced ginger in matchsticks
2 thinly sliced garlic
6 Pea pods thinly sliced
1 cup boiled noodles ( I used whole wheat )
3 tbsp.  Teriyaki sauce
salt as per taste
1 tsp Oil


Method:

Boiled water for noodles and boil as per the package instruction and keep it aside.

Heat a pan with oil in it.

When its heated, add ginger and garlic and cook for a minute till you get nice aroma.

Add rest of the vegetables and chicken and cook till chicken is little brown.


Add noodles and add sauce and mix it well.

If you like little saucy you can add little water and make it kind a gravy. But for us it was perfect so we had it as it is.



Enjoy with chopped green onion on top and for me I need sriracha so I had it with that and side of vegetable spring rolls.


I used this product, it comes with the sauce but it was not enough for my vegetables and noodles.

Brownie Mix Cookies

Had too much of brownies so my kids are not interested to eat anymore traditional way brownie but still they love the taste of it so I make small bites size muffins too. But this time I wanted to make cookies and its really easy and quicker than regular brownie. Make this from ready made brownie mix box , add extra flour, nuts or chocolate chips, eggs and oil and bake it in a shape of cookies and you are done. You don't want to over bake it , just 9-10 minutes and take it out and leave it out on wire wreck for 5 minutes till it gets cool and then you can store it in airtight container.

Ingredients :

1 Box of Brownie (Just dry mix) I use Pillsbury
2 Eggs (for vegan version you can use flex seed egg)
1/4 cup Canola or Vegetable or Coconut Oil
1/4 cup Flour (I used whole wheat but white is also fine)
1/4 Cup Chocolate chips or nuts (optional)

Method:

Preheat oven to 375 F.

In a bowl, add brownie mix, eggs, canola oil and flour and mix it very well. If you are using any nuts or chips you can add it now.

Take ice cream scope and put the cookie dough on greased cookie tray or with parchment paper on it.

Leave at least 2 inches apart.
Bake for 9 minutes.



Take it out. Give a cookie sheet light tap on counter so that will give crinkle on top and it will take out any extra air.
Let it cool on baking sheet for 2-3 minutes and then transferred it to the cooling rack.

Proceed with rest and enjoy.

Savory Oats with Oranges and Olive Oil

I just can not have sweet in the morning with my tea, yes any savory dish is fine but after 10 I can have some sweet. So if I am eating something with or as my breakfast I would prefer savory. I know people going crazy about overnight oats with thousand of variations of it but for me that's dessert. I love it but not first thing in the morning. This is very famous cook's Giada's recipe and its perfect for any busy morning. You can add any other fruit but oranges go perfect. This is for single serve recipe. You can adjust with the quantities for more people or serving.

Ingredients : 

1/2 cup Old fashioned oats
Zest of 1/2 lemon or as per taste
Salt as per taste
1 tsp Fresh Thyme chopped
4 tsp. Extra virgin olive oil
1 orange cut in segments
2 tbsp roasted sun flower seeds

Method : 

In a medium pan, bring 2 cups of water and salt to boil . Add oats and cook  until creamy , about 5 - 6 minutes.

If you want thicker consistency, cook for 1 or 2 minutes more.

Stir in the lemon zest and thyme. Take it out in bowl. Drizzle with olive oil and top it with oranges and sun flower seeds.

Red Thai curry Quinoa Bowl

I love quick and easy recipes but it has to be flavorful and spicy for me. So when I make my dinner, I always look for that kick in my dishes. This is a perfect example of a quick delicious dinner bowl and healthy too. You can use your favorite vegetables, instead of tofu, you can use precooked or raw chicken, fish, or any seafood in that matter and instead of quinoa, brown rice, cauliflower rice. Possibilities are endless for vegetarian and nonvegetarian both.

Ingredients : 

1/2 Block firm tofu
1 cup cooked quinoa
1 each red, green capsicum
1 Carrot chopped in match sticks
1 onion chopped in Match sticks
3-4 tbsp Red curry paste or as per taste
Few thin slices of ginger
2 cloves of Garlic finely chopped
Salt as needed
Oil as needed


Method : 

Cook Quinoa as per package guide.
Add 1 tsp of oil and add 1 tbsp red curry paste and cook for a few minutes. Add quinoa and cook for 2-3 minutes. Take it out and leave it aside.

Heat oil again in the same pan, add vegetables and 1 tbsp or as per taste Red Curry paste and cook for 2-3 minutes. Don't overcook vegetables, it still has to remain crunchy. Take it out and leave it aside.

Heat 1 tbsp oil in the same pan, add cut tofu in it. Make it a little brown on all sides. Add Curry paste and just toss in it so it gets the flavor.

In all these three batches if you think you need to add salt then only add salt. I like to sprinkle lemon/lime juice on top and less salt in food but you can add it as per your taste.

To serve: Take one bowl, add quinoa on one side, vegetables on the other side and tofu on the other side, sprinkle lime juice on top and enjoy a hot, spicy one-pot meal.
