Frozen Yogurt Fruit Cups

When its hot and humid outside, everyone wants something cold to eat or drink. How much ice cream or shakes you can make? Here , a new and a healthy way to beat the heat. Its called frozen yogurt cups, This is a basic recipe, just vanilla Greek yogurt , some fruits and freeze it and its ready. For variation, you can add granola first, then yogurt and then fruits or Granola, yogurt and peanut butter and fruits. If you dont have Greek yogurt, you can hang the curd, add honey and vanilla essence  and use it.



Ingredients for 6 cups

1 cup Greek  Vanilla yogurt
1 tsp Honey
Few Blue berries, strawberries
2 tbsp melted peanut butter

Method :

In a bowl, take yogurt and honey and mix it.

Take a muffin pan, add the muffin wrap in it.

Put 3 tablespoons of the mixtures in 6 muffin tins.

Add as per your desire, peanut butter and fruits.

Freeze for at-least two hours

Take it out , removed the wrapper and enjoy

You can make it in Popsicle molds also.

Kimchi French Fries

We all love French fries but its boring, eating fries same way with ketchup or mustard. Here I have a twist with Kimchi, making it spicy and you can just have it as it is or have it with sriracha mayo, bulgogi meat, or make it like loaded nachos, add beans, salsa, sour cream, guacamole and go to Mexican direction. I am just giving you basic kimchi fries, you can go ahead and make your new versions of it.

For this, I used frozen french fries but you can go ahead and make your own.

I have a bottle full of kimchi to finish so I am coming up with the idea to use that one.

Once it's done, something else will come. 

So lets munch on this new movie munchies.


Ingredients :

1 small package of frozen fries
1 cup Chopped Kimchi
1 onion chopped in length size
1 cup shredded cheese
1 tbsp oil


Method:

Take your nonstick and add oil in it and put the onions in it.

Cook till it becomes caramelized.

Add chopped kimchi in it and mix it. Taste it to make sure you have enough salt in it.



Cook the frozen fries as per the direction.


Heat the oven at 375F.

Take your fries in an oven-proof bowl. Spread one layer of fries, add cheese and kimchi mixture, add another layer of fries and repeat cheese and kimchi. Add more cheese on top.

Bake it till cheese is melted for 10 minutes.

Take it out and let it cool for a few minutes.

Turn on the tv and binge on your favorite Netflix and munch on this.

I had it as it is but you can have it with a side of sriracha mayo, mustard, wasabi whatever way you like it.

Hibiscus Iced Tea

Do you love the Hibiscus flower? If you are in a warm climate then you can see year-round but here it's only in summer so when you see the leaves start to come, you can feel the spring is in the air and when comes spring, then comes summer. And in hot summer days what better than iced tea to cool down. When you make it with hibiscus flowers, it's good for your body also.

This tea is good to prevent hypertension, lower Blood pressure, reduce blood sugar levels, keep your liver healthy, for girls,  it helps with menstrual cramps, help with depression, aid digestion and help with weight management. It's rich in Vitamin C, contains minerals such as flavonoids and has laxative properties.

It's not good for pregnant or nursing moms and if you already have low BP, don't try this. 

Here you can find it in the farmers market otherwise there is always Amazon.


Ingredients : 

1/2 cup  Dried Hibiscus Petals
8 cups of water
1/4 cup Honey or as per your taste
As per taste Lime juice, Ice cubes and few mint strings (optional)


Method

Take a pan and add water, add few dried Hibiscus petals in it. It will change color in a few seconds. 
Once the water starts boiling, switch off the gas and let hibiscus do its work. You can add basil leaves, mint leaves, lemongrass, ginger at this point. 


Let the tea steep for 15-20 minutes. 

Mix it Honey and Lime juice till its nicely mixed. 

You have it either warm or ice cold. If you are serving a crowd, have extra honey and lime juice on the side so people can adjust it as per their taste.

Date Balls Stuffed with Gulkand (Rose Petal Jam)

For Diwali or any celebrations, we are more concerned about sweets, main dishes or even decorations, but don't think much for "mukhvas" means mouth freshener. After eating a nice meal one need to clean the mouth and that time a lot of varieties of mouth freshener comes to mind. From simple roasted fennel seeds to exotic varieties are there But today I am showing you easy, no-cook and loved by everyone, ingredient, Dates. Just crushed the pitless dates and stuffed with gulkand and rolled in grated coconut, green scented fennel seeds or even sprinkles. It will be done in no time and kids will eat this easily since the outside is their favorite and you can feed some nutrition thru dates too.

Ingredients : 

200 Gms of Dates - Pitted
As needed Gulkand
2 tbsp grated coconut
2 tbsp sprinkles
2 tbsp flavored fennel seeds mix

Method :

In a mixture, add dates and make a paste out of it.

Take it out in the dish.

In three separate bowl, take out coconut, sprinkles, fennel seeds.


Now take a small amount of date and make the desired size balls, make an indent and put a teaspoon of gulkand in it and covered it.
Rolled it in either coconut, sprinkles or fennel seeds.




You can serve it once you are done making it or serve to your guest once your dinner party is over or during Diwali once guests had their sweet/savory snacks and need to clean their palate.

You will wow it with this dish I am sure. You can easily increase the quantity since there is no precise measurement is required.

Sabudana ni Khichdi | Tapioca Pearls

I just love sabudana khichdi, basically people eat this when they are fasting, but for me I don’t have that rule to enjoy my favorite food any time of the year. If I am in mood of this, I will make that and enjoy it. This batch of my sabudana was awesome, just needed 10-15 minutes of soaking and it becomes so fluffy and nice and anything I make it from that , turns out nice, did you see my post on sabudana vada that too not fried.? Made from this only and since then I was wishing that this my pot of white pearls never end but it has to end so this was my last cup of sabudana and what else I can make from this then my favorite khichdi. You have to make sure you soaked the sabudana in not too much water, and make sure its dry not dry as lentil but not water is coming out of it. So soaked it in water depend upon your product few minutes to few hours, washed it and leave it on sieve to drip  out extra water.  By that time, you can roast your peanuts, cashew, cut the potatoes, green chilies and chopped fresh coriander leaves so you are good to go.

Ingredients :

1 cup soaked and dry sabudana
2 tbsp. oil
2 tbsp. roasted peanuts
1 potatoes in small cubes
Few roasted cashews
1 chopped green chili
Salt as per taste
1 tsp. Turmeric powder
Small pinch of Clove powder
Freshly chopped coriander leaves & Lime juice

Method:

In a pan, add oil in it.
When it’s hot, add green chili, when its cooked, add potatoes and cover and let it cook on low flame.
When potatoes are done, add peanuts, cashews, turmeric powder, clove powder and mix it.
Then add your fluffy sabudana in it.
Don’t cover it and mix it gently and let it cook for two minutes. If you wish you can boiled the potatoes and use it , it will save your time too.
When it’s done, sprinkle lime juice and coriander leaves and enjoy as a snack or a meal or just as it  is.

Sabudana Vada - Not Fried | Sago Balls and Banana nuts Lassi

During Navratri, people fast or eat farali food. But for me when you say farali food, its always (mostly )  fry food and when you are eating less or doing fast for some reason, why to eat greasy food. This is perfect to eat during fast. But when you are fasting eating frying food is not good on empty stomach in my opinion. So I wanted to make this healthy way but still taking care of fasting rules. This vada are not fried so you don't need to add any flours or yogurt to make soft. It is as soft as it is and still delicious. As you all know my love for my paniyaram pan, I wanted to make this in it and I got perfect opportunity to make this during fast. So here it is, everyone's favorite sabudana vada but in healthy way. To pair it up I made Banana walnut lassi and it was just too good.


Ingredients :

1/2 cup sabudana before soaking
2 potatoes
2 tsp. crushed ginger and green chilies mix
1 tsp. lime juice
1 tsp. roasted jeera (cumin) powder
3 tbsp. crushed peanuts
1 tsp. cinnamon powder
1 tsp. clove powder
salt as per taste
1 - 2 tsp. oil

Method:

Soak sabudana in plenty of water for 2-3 hours. Check the quality of your sabudana and soak it more if needed. Mine was done in 2 hours.
Boil the potatoes in pressure cooker or microwave.
After soaking sabudana, washed them thoroughly and drain it very well.
Take a bowl. Add sabudana, mashed potatoes, ginger, chili, peanuts, lime juice, salt and both powder.

Heat the paniyaram pan. Add drop of oil in it.
Make small rounds of mixture and put it in pan.

Cook it from all the side till its become red. You can make patties and deep fry it or shallow fry it too. Have to try about baking , don't know about that, if anyone try baking it let me know please.
Make all the balls and take it out on paper towel. Its sago, no matter how little oil you put, it will leave oil.
Serve at room temperature with green chutney or Maggie hot sauce or ketchup.




For Lassi :

Mix one banana, 1 cup yogurt, 2 tbsp honey, nuts as per your choice. Mix it in grinder and thick delicious lassi is ready.
