My Treasure

Last year was a great year for me as a blogger. I completed my one year in blogging , made such a wonderful friends thru blogging, learn so many new dishes about different cuisines and won some of the contest and giveaways too. So that's one part of my treasure which I want to share it with you all. Thank you all for such a wonderful gifts you send me and with the help of all these books I can survive in this blogging world lot more than I was hoping. Lets hope and pray that this continue this year too.

Chanajor Salad / Flatten black chickpea salad

Chana jor is a very popular street snack in India , also very popular during train travel too. Vendors come inside the train during travel or while train stops at station, they all come with their variety of snacks. We have been eating this snack since childhood. But to do a very healthy twist instead of just onion and tomatoes and spices, I add cucumber, red capsicum, lettuce and make a healthy salad. Its filling and delicious and chatpata for evening snack or quick lunch. I made it for lunch and it was very filling.

Ingredients:

2 cups Chana Jor (mashed Chickpeas)
1 small red onion finely chopped
1 tomato finely chopped
1 cucumber finely chopped
1/2 head of lettuce
1 green chili finely chopped
chat masala as per taste or sometimes chanajor packet has its own masala
lime juice

Method:

Chop all the vegetables  and chat masala and put it in bowl.

At the time of serving only, add chana jorgaram in salad and serve immediately.
Add lime juice is its not chat pata .

I sprinkled masala peanuts on top for some more crunch.

Vegetable Deewani Handi

This is  a very similar dish to Mixed vegetables. You cook  boiled vegetables in fragrant sauce and served it with paratha or roomali roti. I did not boiled vegetable because I think that boiling and then adding to any curry , vegetables don't absorb that flavor very much. But If you have boiled vegetables on hand and make this curry in jiffy you can do it. Adjust the spices and vegetables as per your taste. Instead of vegetables you can make this with paneer and capsicum or paneer and carrot. But I don't like paneer that much so I avoid when ever I can. Instead I added soya chunks.

Ingredients:

2 cups mixed vegetables ( i had cauliflower, carrot, corn, peas, red and green capsicum, soya chunks)
2 onions puree
2 tomato puree
2 tsp ginger, garlic and green chili paste
salt to taste
3 tsp oil

Make powder masala:
10 whole cashews
6 green cardamoms pods
1 tsp red chili powder
1 tsp turmeric powder
1 tsp cumin and coriander powder
2 tsp kasoori methi (dried fenugreek leaves)
pinch of nutmeg and clove powder
1 tsp Milk powder (if you dont have this you can use milk at the end)

Method:

Make powder masala and keep it aside.
In a non stick pan, add oil in it
When heated add onion puree and cook till its dry and changed its color.
Add tomato puree and mix it.
Add all powder masala and ginger , garlic and chili paste and cook it till oil flots on top.
If you are using boiled vegetables don't add too much water, but if you are using raw vegetables add enough water to cook those and add all the vegetables in it.
Add salt and cook  and covered till vegetables are cook.
Adjust the gravy thinkness and if you are using milk, add it now.
Mix it well and served hot with paratha.
I had with paratha and shredded  beetroot , carrot, white radish raita.

Made cutlets / tikki out of left over subji, adding one boiled mashed potato. Make Tikkis and roll it in panko bread crumbs and shallow fry it on both sides.

Calzone

Calzone is a folded pizza.  It uses same pizza dough and ingredients as pizza and it is in half moon shaped. But we like to use different ingredients in it. so I used Ricotta, Spinach, carrot, garlic and spices. You can use any vegetables or  meat to stuff this dish. Just make sure that those ingredients don't have any water in it otherwise dough become soggy and it's a disaster   I like to make  big calzone so when other one is in the oven we can share the ready one but you can make personal size calzone too.

Ingredients :

Pizza dough (use the recipe which i have it home made wheat dough)
8 oz Part Skim Ricotta cheese
8 oz frozen spinach (thawed and squeeze)
1 carrot shredded
8 garlic cloves finely chopped
1 green chili finely chopped
few black olives
8 oz mozzarella cheese
3 tbsp parmasean cheese
salt to taste
1 tsp dry parsley leaves
1 tsp red chili flakes
Marinara sauce for dipping

Method:
Make dough as per the recipe.

Preheat oven to 400 F.
In a bowl, add ricotta, spinach, garlic, carrot, chili, 1/2 cup mozzarella , olives, parmigiana cheese, salt, parsley , chili flakes and mix it. taste it if its need re seasoning.

Take one part of the dough and make big pie.
Put 1/3 of the mixture in one side of the pie. I am making 3 calzones from this so divide mixture in 3 parts.

then add some mozzarella on the mixture.

Now fold it with other half and make half moon.
Make sure you seal it properly so stuffing don't get out. Then prick it with fork lightly on dough so it doesn't get big.
Put it in the oven and bake it till it's nice brown on both side.

Cut it in half and serve it with marinara sauce and Red Wine on side.

BE VERY CAREFUL while eating cause inside will be piping hot.

Baked Eggplant Parmesan sandwich

In my house my husband eat eggplant only two ways, one is eggplant bhurtha and another is this sandwich. He also love to cook and eat so we try so many ways to make  eggplant so it stays crunchy even after with cheese and sauce. Finally I discovered the best way to cook it. Eggplant skin is bitter so first of all you have to remove its skin. Traditionally it's dip in egg and then AP flour mix and again egg and then in breadcrumbs then deep fry it. We want to avoid deep frying and eggs altogether so I used buttermilk mixture and breadcrumbs only. You can use egg mixture and deep fry it or my way and deep fry it too. But I like to bake it so it stays crunchy. You can serve this as a meal. so lets get back to recipe

Ingredients:
2 black big eggplants (cut in circle) don't take it seeds part, remove skin
4 long breads (i use whole wheat)
1 cup seasoned bread crumbs
1 cup buttermilk (you can make it at home , mixing milk and yogurt
salt and pepper to taste in both buttermilk and breadcrumbs
1 jar marinara sauce
2 cups mozzarella cheese
6-7 cloves of garlic (thinly sliced)
2 spring onions (finely chopped)

Method:
Preheat oven at 350 F.
Wash and cut eggplants in circle.
Take two bowls , in one bowl put bread crumbs, seasoned with salt and pepper and in another buttermilk, seasoned it too.
Dip eggplant first in buttermilk and then in bread crumbs. Make sure you use one hand for wet mix and another for dry so both bowls stay clean.

Put them in baking dish which is already spray.
Ready to go in the oven


cook in in the oven for 15 minutes , turning in the middle to cook on both sides. take out from the oven and leave it aside.

To assemble sandwich, take one bread put 2-3 big tbsp marinara sauce on bread, then put eggplant slices on  it, put generous amount of cheese on it, sprinkle garlic and green onion in it. Put it in aluminium foil and baked it in the oven for 10 minutes or until cheese is melted.  CAUTION : the inside of the sandwich will be very hot so eat it very carefully. 

You can make this on casserole too instead of sandwich, first sauce then breaded eggplant, cheese, layered it and top it with mozzrella cheese, cook till cheese melt and serve hot with a side of garlic oil infused speghetti.
