Plant Based Meatballs Sliders

I just love to explore new cuisine or ingredients, so when I see this product and above all it was on sale I have to buy it so I can try it. One Friday I decided that its going to be the sliders for the dinner. I had nice brioche buns for that and perfect sliced mozzarella cheese to go along with it. On a side I made roasted vegetables and French fries to complete the meal. and it was enjoyed by everyone in the family. 

I have made it with red marinara sauce but you can have it with pesto also. There are lots of ways to use this meatballs in any cuisine you can think of it. You will see more recipes in the future since I have a lot to share with you all. 

You can make kofta curry from this, IKEA style meatballs, soup, spaghetti and meatballs or go in to Asian directions too. 




Ingredients :

1 pack of Meatballs you can use whatever brand you like
2 cups of Marinara sauce
8 Slices of Mozzarella cheese
8 Brioche buns

Method

Heat a pan , when its hot add the frozen meatballs in it. and cook 1- to 15 minutes till its cooked from all sides. Other way you can do it in the oven too. Bake it at 375F for 15 minutes.

When its done, put mozzarella cheese on one side of the bun and toast it on griddle or pan and other side just as it is toasted. 

If you want you can warm up the marinara sauce also so everything is on same temperature. 

When cheese is melted, take two meatballs and put it on the bun , cover it with other side of the bun,  now its up to you if you want you can break the balls and have it or as it is. I like mine whole so I had it as it is along with my roasted vegetables and fries. 

Perfect weeknight meal is ready under 20 minutes.

Pull A Part Dabeli

So you can make lot of variation while making pull a part bread. Lots of cheese, different stuffings, sliders then why not Dabeli. It comes in bread, stuffing , with or without cheese  and you are done. I have simply heat up dabeli bread with oil and without taking apart the buns, stuff the masala in it and enjoy with the sides of your favorite chutneys. Since it is not a Pomegranate season, I didn't add it and I am not a big fan of cheese also, so If you like you can shred the cheese on top of it with sev and onion and pom. This is just for me so I only use 4 buns but if you are feeding more people, make more masala and use it.





Ingredients : 

For stuffing : 

2 Tbsp oil
1 red onion finely chopped
2 Big potatoes boiled and mashed
1 tbsp Chili powder
1/2 tbsp Turmeric powder
1 tsp Garam Masala powder
1 tbsp Dabeli masala or as per you liking but don't put too much it has very strong clove flavors in it
1 cup water
salt to taste
1 tbsp Tamarind chutney
Coriander leaves chopped

Garnishing : 

Chopped onion, masala peanuts, coriander leaves, pomegranate seeds

For assembly : 

4 Dabeli bread
4 tbsp Garlic chutney or as per taste
2 tbsp finely chopped onion
4 tbsp tamarind chutney or as per taste
oil or butter for toasting
sev as needed

Method for Stuffing :

In a pan, add oil and saute onions till its pink. Add all powder masala in it and saute on a very low flame for a minute.

Add water in it and then add mashed potatoes in it and mix it well.
Add salt and see if you need to thin it out potatoes or not  , if stuffing is very stiff, add more water. You need loose stuffing but not runny.

Add tamarind chutney and mix it and transfer it in a bowl.

Layer first stuffing, then onion, masala peanuts, coriander leaves and Pom seeds.





Assembly : 

Cut the bread in between without breaking in to  apart, since its pull apart you need whole thing together.

Heat the pan, add oil / butter and toast the bread on both sides.

Once its warm, add garlic chutney on one side, tamarind chutney on other side and spoonful of stuffing , with little bit of onions in it.

Roll the whole bread in sev so it can cover the edges.

Serve immediately with some green(coriander) , red (garlic), brown (tamarind )chutney.













You might have seen Pull a part Pav bhaji also. Same concept, just stuff it with bhaji. You can do vada pav too.

Eggplant Parmigiana Stromboli

How about combining two favorite dishes in one? Love Eggplant parm and stromboli but don't like too much cheese in Stromboli so I made it with my leftover eggplant parm with little cheese and baked it and have it with warm marinara sauce on side and dinner is done. I always make more parm then needed and store it rest for the future use so you don't have to make again and again.

I have used store brought pizza dough but you can find my Pizza dough recipe here.

My Eggplant parm recipe here. One pound dough can serve 4 so if you need more or less you can adjust the quantity.

The only thing you need to do now its heat up the oven.



Ingredients : 

1 lb. pizza dough (ready-made or homemade)
16 slice of Eggplant Parm if you are making it for 4, one will have 4 slices
Few big chunks of fresh garlic
1 cup of Mozzarella cheese
1 cup Ricotta cheese -strained
1 Jar of Roasted Red Pepper Sliced


Method :

Heat up the oven at 400 F.

If you don't have leftover eggplant parm. prepare it and keep it aside.

Take the dough and make it a large rectangular shape.

Layer the roasted red pepper, eggplant, garlic, both cheese at the left-hand side of the dough, leaving about two inches of space of the side.

Some like to put marinara inside but I don't. If you want you can add 2 tbsp of marinara on top of the stuffing.


Grab the extra dough from the left-hand side and begin to fold and roll over the top of the ingredients until it goes overtop.

Begin to fold over the right-hand side of the dough, tucking as you go especially toward the ends of the stromboli.

The final creation looks much like a large stuffed burrito.


To get a nice brown and crisp crust, coat the outside in an egg wash.

Transfer it to a baking dish and put it in the oven and baked at least 20-25 minutes until its nice and golden brown.

Garlic Knots from Pizza Dough

Sometimes you just to nibble on finger food but you need it quick and delicious, so what do you do ? you can take short cuts and fulfill your desire. Same thing happens with this recipe, wanted to make garlic knots but didn't had time to proof the dough, so got the ready made dough with the seasoning in it, make knots, apply generously flavor garlic butter , baked it and viola, garlic knots are ready to eat. Served it with warm marinara and all loved this kind of snack. So what are you waiting for , just grab the dough from your favorite Italian pizzeria and make this one, if you have time, make the dough from scratch and make it too.



Ingredients : 

1 Regular size Pizza dough
4 Cloves of garlic finely chopped
2  tbsp. of butter
2 tbsp. of olive oil
1 tbsp of each fresh or dried herbs
As per taste Salt and Fresh cracked Black pepper

Method:

Heat oven to 375 F.

In a microwave proof bowl, add olive oil, butter, herbs, salt and pepper and warm it for 30-45 seconds or until butter is melted.

Mix it and keep it aside. 

Flatten the dough and make it 12 golf ball size pieces, give it a "knot" and keep it  aside.


Take your baking tray, put the parchment paper and put your knots it. Take your cooking brush and apply generously garlic butter mixture on every piece. 


Bake till 20-25 minutes or until its nice and brown.


Served with warm thick marinara sauce. You can have this as a side dish with your pasta or pizza or just as a after school snack.  Enjoy

Roasted Vegetables Soft Tacos with Cilantro - Jalapenos Sauce - Happy Cinco De Mayo







Taco is very now everywhere, but traditional tacos in Mexico is soft not the hard shell tacos like you see everywhere in US.

When we went to Mexico last month I came to know about this, they have no such thing as a hard shell taco. So here my share to the cinco de mayo , or the fifth of May—commemorates the Mexican army's 1862 victory over France at the Battle of Puebla during the Franco-Mexican War (1861-1867) Recipe.

I just love soft tacos and very soon one desert recipe also will share it with you all so stay tune. In this particular taco, I roasted vegetables , make cilantro - jalapenos sauce and enjoy it with spicy kick from this sauce. You can choose your favorite vegetables in it and use it, But I try to do more authentic way and didn't added cauliflower or something non Mexican ingredients.  All vegetables are match sticks size so it cooked well.

Ingredients :

1 onion matchstick slices
1  carrot 
1 green and red capsicum
1/4 cup black beans cooked
1/4 cup frozen corn, cooked and grilled
2 handfuls of spinach
2 cloves of garlic finely chopped
1 Jalapenos slices
1/4 cup red cabbage
Salt as per taste
1 tbsp. paprika powder
1 tbsp. taco seasoning
Lime Juice as per taste
1 tbsp. oil
6 small soft tortillas

Cilantro - Jalapenos Sauce
Coriander (cilantro) Jalapeno Dip

Method:

Grilled all vegetables except red cabbage in cast iron or non stick pan and cut them in matchstick size.
Heat a non stick pan or  use the same cast iron and add oil, add garlic and jalapenos and cook for a minute.
Add all vegetables and all spices and mix it nicely, just warm the vegetables and don't over cook it because its already grilled , you don't want mushy vegetables but need a little bite in it.

To serve - warm the tortillas and put the stuffing in it, put some red cabbage and drizzle cilantro jalapenos sauce on top and some pickled or raw jalapenos on top and enjoy with a glass of margarita or juice or water or nothing. Just enjoy.

You can add cheese also but I don't like cheese so I didn't add it.

Grilled Vegetable Focaccia Sandwich with Sun Dried Tomato Tapenade

So when he decided to eat brown rice risotto with grilled vegetables, I knew what I am making for me. I had this beautiful focaccia bread in the house and love to use it and with grilled vegetables it was perfect pairing too. So just made this sun dried tomato tapenade and enjoy my dinner too. Everyone got to eat their favorite food and enjoyed our diner. Yes it become hectic to cook different things but I don't mind that , because I have different thinking about feeding kids, don't like to force them to eat everything. I like to enjoy food, only crying and screaming in the background.

Ingredients for Sun Dried Tomato Tapenade

3/4 cup of oil packed sun dried tomato , if you have just dried tomato, put it in boiling water for few minutes to make it soften and then use it.
1/2 cup black or kalamata olives
2/3 cup EVOO
1 clove of garlic
1 tsp. of dried organo

Method:

Put tomato and olives in blender, with on/off buttons, crushed it, then add garlic, olive oil and oregano and crushed it more.
Blend to make it coarse puree.
Take it out and store in glass bottle and use it as needed.

Grilled Vegetable Sandwich

1 each red, green capsciucm
1 onion
2 carrot
1 cup of spinach

Grilled all this vegetables and cut it in match stick slices. No need to chop spinach.

Make a dressing of 2 tbsp. olive oil, 1 tbsp. balsamic vinegar, 1 tsp. of garlic powder, 1 tsp. of crushed red pepper flakes , salt and pepper and mix it, add those chopped vegetables in it and mix it.

Assembly of sandwich :

Take your bread and cut it in half , not all the way thru. Spread nice coating of sun dried tomato tapenade on one side.
Add your vegetables on top of it and close it and enjoy your diner.

Banh Mi Vegetable Burger Sandwich

So made a burger for him, kids had a regular burger, for me, I made banh mi sandwich. Everything was ready just have to make pickled vegetables and done. I used both burgers for me, readymade as well as chickpeas burgers too. For non vegetarian, you can use pork, chicken and vegetarian you can use tofu too. You can grill the whole thing and make grilled banh mi too.

Ingredients for pickle Vegetables 

1 cup warm water
1/4 cup distilled white vinegar
2 tbsp. sugar
2 tsp. salt
chopped vegetables like carrot, radish, onions, Jalapenos

Method :

Mix the water, vinegar, sugar and salt until its dissolve.
Put the vegetables in it and cover with the pickling liquid.
Leave it in liquid for at least 30 minutes or overnight.

For sandwich :

1/2 French baguette , I like soft bread so I used french whole baguette
2 burgers - homemade or readymade
Butter as needed
1/2 cucumber thinly sliced
1/2 cup pickled vegetables without liquid
few strings of fresh coriander leaves
Sriracha sauce

Method :

Take your bread, apply butter on it.
Put on one slice of bread, burger, top it with pickled vegetables, cucumber, coriander leaves, sriracha and close it with another slice. If you are making grilled cheese, add cheese and grilled it.
Otherwise, enjoy it as it is.
