Aloo Bhaja , Baigan Bhaja and Spring Onion Pulav - Book Review

This is a very interesting post. It's about book review by fellow blogger  Rinku Bhattacharya who blogs at Spice Chronicles. She has few books already published and when she got this one out, The Bengali Five Spice Chronicles, she asked me if I can review her book and I was always fascinated by Bengali cuisine, well who is not, who can say no to Spongy rosogulla or  soft sondesh. And everyone loved their Bhaja so I grabbed that opportunity and here I am. There are a lot of vegetarian options and I was so confused about what to make and finally, I decide to do three dishes which can be served as a diner.

I made Aloo Bhaja ( means fried Potatoes) Bhaja means fried, Fried Eggplant and  Spring onion pulav. In her book, she explains everything in details so you can understand the history and culture of Bengali cuisine too. I know about bhaja but the spring onion pulav was something new for me. I was little hesitant to make that not knowing how it will turn out but the flavor was amazing. You never know that garam masala and other spices go this well together. In the future, I will prepare a few more dishes from this book that's for sure. In these recipes, you have to use mustard oil for the authentic taste.



Ingredients for Aloo Bhaja

2 large potatoes
1/2 Tsp Turmeric
Oil for deep frying or shallow frying, whatever you choose, I did shallow fry.
Salt and freshly ground pepper
1 tbsp Rice flour - it is not in the book but I like the crispness of the flour and masala don't get burnt.

Method:

Peel the potatoes and cut in half and then cut into thin matchstick sizes.

Wash thoroughly in plenty of water. Dry the potatoes. and rub them in salt, pepper and turmeric and rice flour mixture.

Heat some oil in a pan. Fry the potatoes till they are done and make sure it's not burnt.









Ingredients for Bhaigan Bhaja (Eggplant Fry)

4 Medium eggplant
1 Tsp Turmeric Powder
1 tsp salt or as per taste
1 tbsp Rice flour
Mustard oil for deep/shallow fry

Method :

Cut the eggplant into rings.  Roll them into masala.

Heat oil in a pan, add eggplant in the oil and fry for about 2 minutes on each side. Don't overcrowd the pan, finish eggplants in batches.

When it's done, take it out on paper towels to remove excess oil.




















Spring onion Pulav - Ingredients : 


1 tbsp. Ghee
1 cup chopped spring onions
1 cup of rice
1 tsp garam masala
2 or 3 whole bay leaves
1/2 tsp turmeric
1 tsp salt
1 tsp sugar


Method : 

Heat the ghee in a pan, add the onion and cook till its soft.

Add the garam masala, bay leaves, turmeric, salt, sugar, rice.

Mix it nicely. add enough water to cook the rice.

Bring to a boil and then cook covered on low heat for 20 minutes.

Shut off the heat and let this rest for 5 minutes and then fluff with a fork.

Serve hot with any curry dish but I made a meal out of my bhaja.

We have created nice bonding with Cocoiza brand, so when Diane from Cocozia approached me that they are launching Chocolate flavor coconut water, I was in. Last time it was  Extra Virgin Coconut Oil from them and my son was not a happy fellow so when I told him that get ready for chocolate flavor coconut water, he was really excited, so I got my package on before Christmas and I told that I will do it after holidays so here it is. I wanted to incorporate chocolate and coconut flavor in such a way that both flavor mix nicely whatever I do. So I used my tropical frozen fruits , which has strawberries,mango,  papaya, pineapple, peach in it, add those in blender and add more than half of carton of chocolate coconut water in it and thick shake was ready , I enjoyed it for my breakfast to go. And I was full till late afternoon. Ingredients :

1/2 cup frozen Tropical fruits or your favorite fruits , take it frozen so you will get nice thick shake


Method:

Put the frozen fruits in blender, add 1/2 can of chocolate coconut water from cocozia in it
Blend it till nice and thick shake forms.
Enjoy it immediately.

No Bake Chocolate Macaroons and Extra Virgin Coconut Oil Review

This is the 3rd product I am reviewing for the COCOZIA. First two were coconut water and it was awesome so when I was asked about Extra virgin Coconut oil, I instantly said yes because I knew that this product will be awesome too. My son was little disappointed that this time we are not getting coconut water but somehow I made him understand so he is fine for now. About this product , it's 100% organic, unrefined, cold pressed Extra-Virgin Coconut oil. USDA certified and Kosher too. IT is free of pesticides, bleach , Hexane and Trans fats.

So When I got it I wanted to make something, not just review so I Made this No bake , hardly take five minutes Chocolate Macaroons. Its upto you how much cocoa powder you want to add, I don't like too much bitter so I just used 4 tbsp. But you can go upto 6 , don't add more otherwise it will be bitter.

Ingredients :

1 mashed banana
1/4 cup Extra Virgin coconut Oil Melted
1/4 cup maple syrup (or you can use any liquid sweetener)
1/2 tsp Vanilla extract
1.5 cup unsweetened coconut flakes / powder

Method:

In a bowl, mashed the banana nicely so no lumps there. 
Add melted Extra Virgin Coconut oil, maple syrup, vanilla extract and mix it. 
Sift the cocoa powder and mixed it then add coconut and mix it nicely.
Get ready your baking dish with parchment paper on it. 
Take tablespoon and scoop round of it on parchment paper.


Put it in the fridge for 20 minutes until its nice and firm.
You have to keep this in fridge only because outside it will be soften. 



You can adjust maple syrup as per your liking , this is perfect with 4 tbsp. of cocoa powder, If you add more , add more maple syrup too. Enjoy your chocolate macaroons when you have sweet cravings without any guilt.

I made no cook coconut ladoos also from this oil. and it taste yum and that's also without sugar, just added mashed banana , coconut oil and coconut powder.

Product Review - COCOZIA Coconut water

Remember when I did review first time of this product back in October 2013, since then Me and my son fell in love with this product. Whenever we go out , he always make sure we have coconut water. In mean time I won one competition and in then I had amazon card, so I make sure that I buy this product to make him happy. So When Diana from Epicurex email me about to review this product again , I quickly said yes because its like making my son happy is so easy and above all she told me that its now in bigger size too. That was awesome too.


so When I told my son that I am getting one box of coconut water, he hugged me and said mom you are awesome, BTW , awesome is his favorite word. When the box came, he was literally dancing.
I open it and he took one and put it in fridge. You know now they have this big size, 16.9 oz container, easy to pour in glass and you can take whatever you want it in glass and put it rest in fridge. So no waste.

When it was cold , he took it out and just finished it before doing homework.

Asian Store Trip

In my neighborhood, there is a one south Asian Store but on other side of the town, one more new store open, after a worth wait of one year. So first chance I got, I went there and boy, I was in food heaven, all the chinese vegetables, sauces, noodles, tofu varieties. I was in big dilemma what to buy and what not to buy. So finally narrow down to some of the things which I can use it fast and then go again to amazing store. This time I went with my kids and parents and it was weekend so they had lot of new products and its samples too. So Kids tried lot of things and they find one particular sample very interesting and they loved it so I get that home for lunch. Store's name is Asian Foods.

 Lot of varieties of greens and vegetables.
 Leek flowers, chives and what not.
then comes All sorts of noodles

Sauces and all kind of drinks

But my kids love this Chives stuffed pockets. 
 It comes in 4 stuffed pockets.
 Just heat up the pan, add one tsp. of oil and cook it on both sides, cut it and have it as it is or served with your favorite sauce. For kids I just had it as it is.
Hope you like my visit to the beautiful amazing south asian store. Going to use other stuff to make my diner.
