Stuffed Poblano Peppers in Red Spicy Salsa

I love Mexican dishes. But sometimes its too much cheese and I am trying to eat less cheese so come up with this dish. Instead of baking this dish in egg and breadcrumbs and loaded with cheese, I used my spicy salsa and add just a touch of cheese and put the lid on the pan and cook it on the stovetop. It was fast and delicious. If you want to make a meal out of it, you can make a side dish of Mexican rice, guacamole, but for me, it was enough as it is. I had three big poblanos stuffed with a spicy filling of vegetables and soy chunks I was happy. You can make it like this too.





Ingredients : 

3 Poblano peppers
2 cloves of garlic chopped finley
1/4 cup of black beans, cooked
1 each Red and green bell pepper, chopped
1 small white onion diced
1/2 cup Boca Beef crumbles Boca Foods Meatless Natural Ground Crumble, 12 Ounce -- 12 per case
1/4 cup frozen sweet corn, thawed
1 carrot diced
Salt as per taste
2 tbsp or as per taste Mexican seasoning
Lime juice as per taste
Cilantro leaves chopped
1/4 cup shredded cheese
1 Cup  Roasted Red Jalapenos Salsa
1 tbsp oil

Method : 

Take poblanos, Make a slit in between, make sure you don't cut through.
Take the seeds out and roast it over the flame. or you can first roast it in and cut it from one side and clean the seeds out. whatever way you can do it.

Make the stuffing: heat the pan, add oil, add garlic, let it cook for one minute, then add all the vegetables and beef and seasoning, salt.

Cook till the vegetables are almost cooked but not done. Sprinkle cilantro and lime juice and keep it aside.

Take it out in another bowl.


Peppers: Once it's done put the poblanos in a brown bag or plastic bag and close it so the air stays inside.

After 10 minutes peel off black skin, never washed the peppers, you need that char flavors.

If you already cut it then put the stuffing. Add the cheese on top, it's your choice how much you want to put it on.

Heat the round pan, add salsa and heat it up.

Now add stuffed poblanos with cheese on the pan. Don't overcrowd the pan. Three for one pan is good.

Cover the lid for the pan and cook on low to medium flame till the cheese is melted.

Turn off the heat and serve it in the dish, first poblano and then sauce.

Enjoy the light but flavourful Mexican dish at the comfort of your home.

Greek Yogurt Labneh with Candied Ginger and Honey

I love different kind of cheese, either its Mozzarella or ricotta or mascarpone or cheddar or feta..My least favorite is paneer, somehow I am just done with paneer and since we have so many different kind of cheese why just stick to Indian cottage cheese and not tried rest? So I made ricotta , mascarpone at home now its time to make Labneh at home. Labneh is a strained yogurt cheese from Lebanon, it can be savory, sweet too. I made simple labneh and I flavor with orange blossom honey and candied ginger. Only trick is you need whole fat greek yogurt  , don't even think about fat free or 2% yogurt. It's not going to give you same texture, After straining it will be like blank canvas, you can add your flavor. to make savory add, any herbs ,garlic and olive oil and have it with pita chips. It's so light and fluffy  just like cloud. I made it sweet with orange blossom honey and my candied ginger.

Until now I never saw any Indian blogger make this cheese, but now I am pretty sure everyone will jump with their own creation to make this, am I right or not? people just don't do their own research love to do copy -paste. Anyway I did this first so I am happy. Enjoy this delicious spread as cheese or as dessert.

Ingredients :

2 cups Whole fat greek yogurt
2-3 tbsp. orange blossom honey or regular honey and add orange zest.
2 big Candied Ginger, chopped very thin

Method :

Line a large sieve with cheesecloth,

Set over a medium deep bowl. Place yogurt in sieve.
Gather edges of cheesecloth to cover yogurt.
Place in refrigerator and let drain for 24 hours.
Transfer the cheese to a serving dish, cover and keep in fridge till ready to serve.






If you like, add herbs and make a balls and preserve in olive oil.
To make it sweet, add honey and candied ginger in cheese and chill it and enjoy it after dinner as dessert or as it it.

Nacho Grilled Cheese Sandwich

Going to celebrate Cinco de mayo , cinco means five and Mayo means May, so it comes on fifth of may but why till wait then. Start celebrating now with this delicious sandwich. I just love to watch food network and if I am stuck at some show or host, I googled them and try to know more about them, their creations. I was a big fan of a show , Food Network star, where they find new chefs, and the winner got the show on network. One chef who got this contest was Jeff Mauro, he was known as sandwich man, this sandwich inspired from his take, I like to make a big sandwich but that time what ever ingredients i had it , I play with it, next time will make it big one. I gulp down two sandwiches because the salty cheese and spicy jalapenos that combination is just too delicious. You can make the way he make it, here . but to make vegetarian I did some changes and boy , I just loved it. If you are making for kids, adjust with their taste buds.

Ingredients :

6 slices of WW bread or your choice of bread
4 tbsp. refried beans
4 tbsp. salsa or as you needed
Few slices of pickled jalapenos
As needed cheddar cheese
Few black olives
Few tortilla chips
1/2 red onion sliced

Method:

Take your sandwich maker, put one slice down, first put cheese, then refried beans, salsa, pickled jalapenos, olives, onion, tortilla chips and more cheese, put other bread.
Close the sandwich maker and in five minutes open up and your ooey gooey spicy sandwich is ready .
I just had with side of more chips and salsa.
Its perfect for light snack or lunch.

Ricotta Peda

My sister made this peda and posted on her blog, before posting she send me pictures also and since then I was craving for that. Luckily I had ricotta in fridge which I need to finish it up so use that to make peda and enjoy it. Its very easy compare to milk peda. I was done in 25 minutes.

Ingredients :

4 cups ricotta cheese
7-8 tbsp. sugar or as per taste
Pinch of cardamom powder
Roasted kesar (saffron)
Few cashews or any nuts you prefer

Method:

In a big pot, add ricotta and sugar and cook till it becomes lump.
Meanwhile add cardamom powder and saffron in it.
When it leaves side and become one big lump, take it out in dish and when its warm enough to hold it, give a shape.
When you make circle, put a dent in middle and add nut in there. I used cashew but you can add pista or almond or anything.
Serve at room temperature, store leftover in fridge.

No Bake Cannoli Cheesecake

After tiramisu this is my favorite Italian dessert. But I don’t like traditional way to eat it, first I don’t have
those mold to shape it and second I have to fry those and I always run away if I have to fry anything.
Since my sister made bite size cannoli I wanted to make that and did that and enjoy it, and it left me
craving for more.  So when I made my ricotta cheese  and used it in recipe , still had some leftovers to
use it. As you know, I don't like leftovers, so before it goes bad, I have to use it and thought lets make no
bake cheese cake. What not to love about this, it has ricotta cheese, whipped cream, waffle and
chocolate chips, tell me you all , if you don't like any of these things. ? Well I like all. I use my frozen
chocolate chip waffle as a base, but you can use any chocolate wafers or vanilla wafers or Nila cookies.

Generally in cheesecake only in the bottom we put crust, but in this one I layered it but if you don't want
to do that way, you can just put in the bottom.

Ingredients :

2 frozen chocolate chip waffles – toast it and keep it aside.
½ cup Ricotta cheese
½ cup whipped cream
2-3 tbsp. sugar or as per taste
¼ cup Chocolate chips
For garnish – any dark hard chocolate slab

Method:

In a bowl, add ricotta and whipped cream, add sugar in it and mix it till sugar melts.
Add chocolate chips in it. And fold it
Take two shot glasses or bowl , in which you want to make cheese cake.

Make pieces of waffle and put it in bottom.

Scoop ricotta mixture and put it on top, If you want to do layers, put one big tbsp. of ricotta mixture and

again a few pieces of waffle and again ricotta. The top layers should be Ricotta. Garnish with dark chocolate

shavings and few more chocolate chips.

Put it in the fridge for 1 hour and that will be the most difficult time in your life that day to wait for it.

After that, take out the glass and enjoy the yummiest and easy and quick dessert.

Baked Ziti - Healthy way

Regular ziti is kinda  not healthy, it has regular ziti pasta, which is not whole wheat, had lot of both cheese, ricotta and mozzarella and no vegetables, so make it healthy , I cut it ricotta and added little heavy cream to give some body to sauce. then add vegetables and above all its Whole wheat penne. Final result, awesome cheesy pasta is ready. Yes you can call it , it just cheesey pasta Italian way. For kids portion I put it lot of cheese, for us just a little bit. Pair it with garlic cheese bread and side of salad and dinner was done.

Ingredients :

1/2 box uncooked WW penne
1 big carrot finely chopped
1 onion chopped
1/4 cup frozen corn
Few black olives
Few stings of basil leaves
As per taste Italian seasoning and red chili flakes
4 cloves of garlic
2 tbsp. EVOO - Extra virgin olive oil
As per taste garlic powder
1/4 cup heavy cream
1 cup of Mozzarella cheese
1 Jar of Best quality Marinara sauce
2 tbsp Parmesan cheese

Method:

Cook and cool pasta as per package direction and keep it aside.
In a big pan, add olive oil in it.
Add garlic and flavor the oil for few seconds.
then add carrot, onion, corn in it.
Add seasoning, red chili flakes , garlic powder and cook it.
Add marinara sauce , leave 2-3 tbsp aside to coat the baking dish.
Add heavy cream and mix it, nicely and cook on low to medium flame for 5 minutes to give that whole day cooking flavor.
Add pasta in it and mix it nicely.
Add basil , olives in it.
Preheat the oven at 400 F.
In your baking dish, spread that reserve marinara sauce so pasta doesn't cook while baking.
Add half pasta and spread mozzarella cheese, then spread leftover pasta and more cheese on top.
On top sprinkle some parmesan cheese and put it in oven for 15-20 minutes or cheese is nice and melting.
Take it out, serve it along with salad and garlic bread.

Again, add your choice of vegetables, just make sure , cooking and baking don't make it mushy.

Ricotta Chocolate Mousse and 2nd Anniversary bloggging

Who doesn't love easy desserts? well I am on top of the chart. I like to make easy and small quantity desserts because while baking a cake its too much quantity. Its not that I don't bake but only when I have enough people to share with it. otherwise keep on eating same thing for too long, makes me sick. So I always looking for after dinner dessert would be only for that night or if its like ras malai then two nights, that's it. So when I  have to use up ricotta, I made ricotta rasmalai and this mousse. Its says Ricotta chocolate but I didn't put too much chocolate, because I wanted to taste ricotta. You can add any fruit pulp, just make sure there is no water in it. I used chocolate wafers and just grated in it and mix it with ricotta. You can add chocolate sauce or cocoa powder too.  I dont like to make whipped cream, because you have to make that at home, when you can buy whipped toppings ready made in store why to bother making it at home, but if you are like making all at home, go ahead and make whipped cream and add it with ricotta otherwise whipped toppings works just fine, it is light and already sweeten , your work is done there.

So in other news, Today is my 2nd year in blogging, Its just seems like yesterday when I started it and in two years I made such a wonderful friends in all continents and make my little space in this blogging world. Got recognition and appreciation by winning competitions and still learning a lot day by day. And in our  life we are  at that age, where health is the most important factor for us and living in US where obesity is  very big issue, I try to spread word by cooking healthy dishes. I know everyone don't have same point of view, but this is my views towards food and living. When we were in our late 20s since then we started eating healthy so now in early 40s we are still going on strong and if GOD willing  we can continue this.

So from bottom of my heart, I am really thankful to all of you , all my family, friends and blogger friends , visitors who all come to my humble space and visit it, I really appreciate your visits and comments. Ingredients :

1 cup Ricotta
3-4 tbsp sugar or as per taste
4 tbsp whipped topping
4 small chocolate wafers

Method:

Take ricotta in a bowl, just make sure there is no water in it.
Mix it with spoon or plastic spatula and make a smooth ricotta.
Add sugar and mix it nicely.
Then shred chocolate in it and mix it gently.
Add whipped topping and again fold it.
Take shot glass and fill it up
If you like reserve some chocolate to grate on top.
Cover with plastic wrap and let it set in refrigerator for  one hour.
Take it out after hour and enjoy it.
