Quinoa Burrito Bowl

As you all know Quinoa is very versatile grain, you can put the flavor in it and it will absorb like a sponge. So here we go again, with one more idea how to use quinoa in Mexican food. Instead of rice, you can make quinoa as a base and add all your toppings for a burrito and your bowl, healthier looking and test delicious is ready to eat. I had it vegan oven fried "chic"ken on a side to get extra protein but you can have it as it is with or you can add regular chicken, beef or your choice of protein in it.




Ingredients :

1 cup washed and cooked quinoa
1 tbsp oil
1 onion chopped
1 clove garlic chopped
1/4 cup drained and rinsed can black beans
Few strings of cilantro washed and chopped
2 tbsp Paprika powder
1 1tbsp Taco seasoning
Lime juice and salt as per taste

For Toppings

Refried beans
Guacamole
Lettuce
Tomatoes
Onions
Caramalised onion and mushrooms
Sour cream and salsa

Method : 

Washed and cooked quinoa and keep it aside.

Heat the pan, add oil in it.

Add garlic and onion and cook till its translucent.

Add beans and all the spices and mix it.

Cook for 1 minute.

Add cooked quinoa and mix it nicely.

Take it out from heat and add cilantro and lime juice.

Make four part of the cooked quinoa.

Take one part, add all your toppings on quinoa or you can make it like what I did it. Spread it on a bowl and enjoy it.

Easy No Cook Chocolate Mousse

Valentine days come and go, we celebrate love every day. When you are with your loved ones, its Valentine and when you are not, its a sadness in the heart. We don't go out on Valentines for a few reasons, first, it's always working day and time doesn't work with us, second, all the restaurant wants to make more money so they are in to finish your order and in a mood to kick you out, its like you are paying to eat there but at their terms. Third, We can create our own menu and food, according to our choice and enjoy the leisure of our time and don't have to worried about kicked out.  and above all, its economical and the amount of money you spend outside, at home, you can create an awesome meal and you don't have to be in pressure to "show off" on social media about who went where. Kids wanted something special so I made a few desserts and dishes the whole weekend so they can enjoy.

This is very easy and no cooking required chocolate mousse. I got Godiva chocolate pudding and add whipped cream in it and set it and enjoy it. I got a few more ideas where to use that pudding so it will come up in the next few weeks.



Ingredients :

1 chocolate pudding mix
2 cups of milk
2 cups of Whipped cream
Few chocolate chunks

Method:

Prepare pudding mix with two cups of milk and leave it for five minutes, It will thicken it. After that add whipped cream and mix it nicely.

When it's nicely mixed, take it out in your serving cups, by flapping on your palm, take out any extra air in the mix. 

Add a spoonful of whipped cream on top of it and add a chocolate chunk on it. 


Keep it in the fridge for an hour or so. 

Enjoy it cool.

Savory Mung Bean Pancakes with Spicy Kimchi

When you made a big batch of kimchi, you have to find a way to use it and knowing me I don't like to eat it as it, I am always looking for trying new ways to eat it. So before I added in Quinoa, this time it's in Pancakes.

These are a very famous Korean dish which has soaked and grinds mung beans, pork, scallions, and kimchi and makes pancakes have it with a side of soya sauce flavor with vinegar, sugar and Korean hot sauce. I cut a short cut, instead of having green mung beans, I soaked yellow spilt mung beans and make a paste of it, added kimchi, a little bit of hot sauce and made pancakes. Still, I didn't have scallions in the house, I omitted it but if you have it, please add it.



Ingredients 

1 cup of Soaked and grind yellow mung or green mung beans
1 cup of chopped Kimchi
2 cut scallions
2 tsp. Soya sauce
1 tsp. Garlic powder or 1 clove of garlic finely chopped
1 tsp. of Sesame oil

Method : 

Soaked and grind mung beans with very less water, we need thick batter the way we make besan chilla.

Add kimchi, if its too big pieces, cut it in bite size.

Add the rest of the ingredients and check the seasoning and adjust accordingly your taste.

Heat a nonstick flat pan, add little oil and ladle the mixture into the pan, and try to make it in a circle.

And make it is not so thick, not so thin layer.

Cook it on one side and then flip it.

Cook on another side also and take it out on paper towel.

Finish rest and enjoy hot with soya sauce mixed with vinegar, hot sauce, sesame seeds in it.
